  • 2 (14 ounce) cans full-fat coconut milk, chilled overnight
  • 1 cup sliced strawberries, divided (Optional)
  • cup tahini
  • 5 pitted dates, soaked in hot water for 30 minutes and drained
  • 1 teaspoon almond extract
  • cup sliced almonds
  • cup sliced fresh strawberries (Optional)
  • 1 tablespoon sesame seeds (Optional)

Directions

Follow these steps for a delicious, creamy homemade ice cream:

  1. Freeze the base of your ice cream maker for at least 12 hours.
  2. In a high-speed blender, combine the coconut milk, cup strawberries, tahini, soaked dates, and almond extract. Blend for about 1 minute until the strawberries break down and the mixture is smooth.
  3. Pour the blended mixture into your ice cream maker and churn according to the manufacturer's instructions. This should take around 5 to 10 minutes.
  4. As the mixture starts to thicken, add the remaining cup of strawberries and sliced almonds. Continue churning for another 10 to 20 minutes until it reaches a soft-serve consistency.
  5. Serve immediately as soft-serve ice cream, garnished with extra fresh strawberries and sesame seeds, if desired. Alternatively, for a firmer texture, transfer the ice cream to the freezer and freeze for 1 to 2 hours.

Cook's Notes

  • You can use fresh or frozen strawberries based on availability.
  • Slivered almonds can be used instead of sliced almonds, depending on your preference.
  • Vanilla extract can replace almond extract if you prefer.
  • If you like your ice cream a bit sweeter, substitute cup of raw honey for the dates.
