Spaghetti Squash Pie

Ingredients

  • 1 cup white sugar
  • 3 large eggs
  • cup butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups cooked, shredded spaghetti squash
  • 1 (9 inch) pie shell, baked
  • 1 pinch ground nutmeg (Optional)
  • 1 pinch ground cinnamon (Optional)
  • 1 cups whipped cream for garnish (Optional)

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: In a large bowl, beat together the sugar and eggs until the mixture is light and frothy.

Step 3: Add the melted butter, lemon juice, and vanilla extract to the egg mixture. Beat until everything is well combined.

Step 4: Stir in the shredded spaghetti squash, ensuring it is evenly incorporated into the mixture.

Step 5: Pour the mixture into the pre-baked pie shell.

Step 6: If desired, sprinkle a pinch of ground nutmeg and cinnamon on top of the pie for extra flavor.

Step 7: Place the pie in the preheated oven and bake for 40 to 45 minutes, or until a knife inserted into the center comes out clean.

Step 8: Remove the pie from the oven and allow it to cool on a wire rack before slicing.

Step 9: Before serving, garnish each slice with a dollop of whipped cream if desired.
