Scotcharoos Recipe
Ingredients
- 1 tablespoon unsalted butter, or as needed
- 1 cups peanut butter
- 1 cup light corn syrup
- 1 cup white sugar
- 6 cups crisp rice cereal
- cup semisweet chocolate chips
- cup butterscotch chips
Directions
- Gather all ingredients.
- Generously butter a 9x13-inch baking pan and set aside.
- In a large pot, combine peanut butter, corn syrup, and sugar. Cook and stir over medium heat until the peanut butter melts completely. Bring the mixture to a boil. Remove from heat.
- Stir in the rice cereal until well combined with the peanut butter mixture.
- Transfer the mixture into the prepared pan and press it down using buttered hands to evenly distribute.
- In a medium saucepan, melt the chocolate chips and butterscotch chips over medium-low heat, stirring constantly until smooth.
- Spread the melted chocolate mixture evenly over the top of the bars.
- Allow the bars to cool completely for about 20 minutes before cutting them into 24 squares.

One of my favorite treats, ever since I learned how to make it at church daycare as a very small child. It really is wonderful to make with small children and you can make a sweet treat with ingredients that cost next to nothing and are usually found in your pantry. NOTE: Instead of butterscotch chips in the "frosting", I like to use Reese's peanut butter chips. My family can't keep their hands off of them! Try it for yourself, you'll see.

i have been making these for seems like forever. if you want chewy bars using the 1 c. method for sugar, syrup and JIF peanut butter but also use 1/4 c. margarine, bring sugar & syrup and margarine stirring constantly to rolling boil, stop stirring and let boil 1 minute. Remove from heat add peanut butter, stir into 6 cups rice krispies, melt 1c. each of semi sweet chips, milk choc chips and butterscotch chips for frosting. I double everything so i use 1/2 c. margarine (blue bonnet) 2 cups everything else and 12 cups rice krispies. So making the frosting is 1 bag of semi sweet choc chips, 1 bag milk choc chips and one bag butterscotch chips, i have found if you mix these together and micro for 2 minutes exactly, stir well, then 15 to 30 more seconds it melts them good. My double batch makes a 17x12 pan size of perfect bars. NEVER have my bars come out hard when you use the margarine and this method!!! Just chewy goodness!!!

I’ve been making what we call Chocolate Scotch Rows for over 50 years which is similar but that I like better: “Pam” a 9x13 pan. Add 1 cup sugar, 1 cup white corn syrup to a large pot and bring to a boil. Lower heat to a simmer and add 1 cup smooth peanut butter mixing until fully incorporated. Remove from heat and stir in 6 cups Rice Krispies mixing well. Pour into pan and tamp and smooth down. In your now empty pot, melt 6oz milk chocolate chips and 6oz butterscotch chips together on low heat to create a smooth, glistening icing (keep heat low - you don’t want to burn this). Once melted and smooth pour over your bar creation and smooth out. Refrigerate for at least 30 minutes. Turn pan onto cutting board to remove squares from pan then flip them over and cut into serving squares. These freeze very well.

I made this and followed other reviewers suggestions. Added 1/2 stick margarine to the corn syrup and white sugar, bring to a soft boil then add the peanut butter. Turn off heat and add the Rice Krispies. Sprayed the 13X9 pan with butter spray and pressed in the krispie mixture with a piece of wax paper. Then melted the butterscotch and chocolate morsels for 2 minutes in the microwave. When I took them out the morsels were not completely melted, I just kept stirring and all of it melted. I initially used a 1/2 cup of the chocolate morsels and 1/2 cup butterscotch. It was too thin of a "frosting." 1 cup of each did the trick. I let it sit for about 90 min but the frosting hadn't hardened, put in the fridge for about 30 min and that did the trick. They are a little work but so good.

A few tips from a good ole Midwestern girl who has made these a 1000 times: (1) add a stick of butter to the sugar and corn syrup mixture and (2) pull the mixture from the heat as soon as it starts to bubble (avoid overcooking to prevent bars from getting too hard).

I am ambivalent to not rate this 5 stars. the taste is 5 stars. However, I am glad I read the reviews first regarding 'boiling' the syrup. I let it just come to a slight bubble, and stopped there. I also did not add the peanut butter until after the corn syrup and sugar cooked. It melted quickly. I used chunky peanut butter to get those bits of peanut. I would not have wanted to have had it come to a full rolling boil, as they would have been too hard. As it is, they are plenty firm. I also used 3/4 cup each butterscotch chips, and chose to use milk chocolate chips 3/4 cups. This was the perfect amt. Not too thin, and not too thick to lose the flavor of the treat underneath being inundated with chocolate. I sprinkled some muti-colored non-pareils for the holidays; this made them very festive. the taste is wonderful, and oh so easy. Good any time.

As others suggested, I barely brought the mixture to a bubble, not full boil. Also added the butter and doubled the topping. Perfect.

Amazing!! Recipe should say to put chocolate chips and butterscotch in a glass bowl above boiling water. You never want to put chocolate over direct heat. It will burn.

My daughter recently started making these and they turn out great! I'm not a big fan of butterscotch so we left it out and sprinkled heath bar pieces on top instead. Those having the issue that they are getting too hard are boiling the syrup too long and turning it into the hard crack candy stage. Just bring to a bubble and turn off. Keep stirring until sugar is dissolved...

Huge favorite. A good friend hints around about a new batch every 3 weeks or so... My changes; I always substitue honey for corn syrup. When made according to the original, these are way too big for me to get my mouth around, so I cut the krispie treat portion in half (1/2 cup honey, 1/2 cup sugar, 3 cups rice cereal, and 1/4 cup butter - cooked together; 3/4 cup peanut butter mixed in off heat.) And since the frosting is the best part... I added half again on the chips (3/4 cup of each.) I'm going to try the marshmallow substitute for sugar next...

I love Scotcharoos. Unfortunately this recipe has a fatal flaw. If followed as directed, will result in a bad texture and a hard bar. DO NOT BOIL PEANUT BUTTER!!! Add peanut butter after boiling sugar mixture and stir to melt. And get it just boiling, then take off heat. I add 4 Tablespoon of butter to soften as well.

I like this recipe. The only thing I like to do is melt about a 1/3c butterscotch chips and drizzle it over the top of the frosting for a decorative look.

I made this before but I wasn't fond of the butterscotch so today I used peanut butter chips instead. I also used chunky PB (my daughter suggested this, saying it needed more texture. I also sprinkled chop nuts on the top. Yummy say I!

I love these things. I can’t get enough of them. I had my niece make me 5 pounds. Double the peanut butter and double the chocolate. Now I’m gonna ask her to put blueberries in when she mixes the cereal and the peanut butter mixture. I’ll let you know how it taste.

These bars are iconic in my home state of Iowa. They are great to bring to a summer picnic or pot luck. I agree with the recommendation of another person to use Jif peanut butter - it makes a big difference! I also use a full bag of both chocolate chips and butterscotch chips, which makes a thicker layer of chocolate topping.
