Seven Layer Bars

Seven Layer Bars are a sweet, rich, and indulgent treat that has been a staple in American kitchens for decades. Known for their simplicity and versatility, they consist of multiple layers of delicious ingredients like graham cracker crumbs, chocolate chips, butterscotch chips, coconut, and sweetened condensed milk, all baked together in one pan. Their popularity comes from their ease of preparation, with a short ingredient list that delivers a rich, multi-textured dessert perfect for gatherings or casual snacking.

History of Seven Layer Bars

The exact origins of Seven Layer Bars are a bit unclear, but they are believed to have been first created in the 1960s in the United States. Their simplicity and the convenience of using common pantry ingredients made them a hit among busy home bakers. Often referred to as magic bars or Hello Dollies, this dessert is part of the broader category of layered bar cookies. Seven Layer Bars grew in popularity during the 1970s, especially in the American South, as a favorite choice for potlucks and family gatherings.

Regional Variations and Features

While Seven Layer Bars are popular across the United States, they have regional variations depending on local tastes. In some areas, bakers swap out ingredients like walnuts for pecans, or add additional layers like peanut butter chips or toffee bits. Some even skip the coconut if it's not a favorite. This flexibility makes the recipe perfect for customization, allowing it to suit a wide range of palates. Despite the variations, the foundational concept remains the same: layer sweet and salty ingredients, pour sweetened condensed milk over the top, and bake.

How They Differ from Similar Desserts

Seven Layer Bars are often compared to other layered bar desserts, such as Magic Bars or Hello Dollies. While these names refer to similar recipes, the Seven Layer Bars have a distinctive combination of chocolate chips, butterscotch chips, walnuts, and coconut, all topped with sweetened condensed milk. The order in which the ingredients are layered, as well as the specific types of chips and nuts used, can vary, but what sets Seven Layer Bars apart is their signature combination of texturesfrom the crumbly graham cracker crust to the gooey center and the toasted coconut topping.

Where Seven Layer Bars Are Typically Served

Seven Layer Bars are often served at casual events, such as family dinners, bake sales, potlucks, and birthday parties. Their easy-to-make nature and portability make them a favorite for gatherings where a quick, delicious treat is needed. They are also a popular dessert for holiday celebrations, such as Christmas and Thanksgiving, due to their festive appearance and rich flavor. These bars are a great choice for sharing because they can be easily cut into individual portions and packaged for guests to take home.

Fun Facts About Seven Layer Bars

1. Despite their name, the number of layers in these bars can vary depending on the recipe. Some versions have as few as five layers, while others feature additional ingredients like peanut butter chips or caramel swirls.

2. The use of sweetened condensed milk is key to the success of these bars, as it acts as both a binder and a sweetener, holding the layers together while adding richness to the flavor.

3. Seven Layer Bars are not only popular in the U.S., but they have also found a place in Canadian kitchens, where they are sometimes referred to as "Magic Cookie Bars" or "Magic Bars." In other parts of the world, similar layered bars are made with different regional ingredients, but the basic concept remains the same.

4. Many bakers recommend using parchment paper to line the pan, which makes it easier to remove the bars after baking. This simple trick ensures a smooth release and helps keep the bars intact when cutting them into squares.

FAQ about Seven Layer Bars Recipe

To store Seven Layer Bars, place them in an airtight container to prevent them from drying out. They can be kept at room temperature for up to 3-4 days. For longer storage, refrigerate them for up to 1 week. You can also freeze them for up to 3 months. Just make sure to layer parchment paper between the bars if you're stacking them in the container.

Yes! While the recipe calls for walnuts, you can substitute with other nuts such as pecans, almonds, or cashews. If you prefer a nut-free version, you can skip the nuts entirely or replace them with extra chocolate chips or coconut.

Absolutely! Feel free to experiment with different types of chips like white chocolate, milk chocolate, or even peanut butter chips. Some variations can include a combination of chocolate and butterscotch chips, depending on your preference.

To prevent the bars from sticking, you can line your baking pan with parchment paper or foil before adding the ingredients. This will make it much easier to lift the bars out after baking. Additionally, you can lightly grease the pan with butter or cooking spray before adding the crust.

Yes! Seven Layer Bars can be made ahead of time. In fact, letting them sit for a few hours or overnight allows the flavors to meld and makes them easier to cut. Just be sure to store them in an airtight container to maintain their freshness.

To get clean cuts, allow the bars to cool completely before slicing. If you're in a rush, let them cool for at least 30 minutes, and then use a sharp knife to cut them into squares. Some people prefer to use a pizza cutter to make the process quicker and cleaner.

Yes, you can double the recipe if you're looking to make a larger batch. Just be sure to adjust the pan size accordingly (a larger baking pan, like a 17x11-inch sheet pan, would work well). You may need to increase the baking time by about 5-10 minutes depending on the thickness of the layers.

To prevent the coconut from burning, make sure to add it as the last layer of the bars. This will ensure it toasts evenly during the baking process without overcooking. If you're concerned about the coconut burning, you can lower the oven temperature by 10-15 degrees or keep an eye on them in the last few minutes of baking.

Yes, you can make the crust thicker by using more graham cracker crumbs and butter. Some people prefer a thicker crust for extra crunch and flavor. If you double the crust ingredients, you may need to slightly adjust the baking time.

Sweetened condensed milk is a key ingredient in this recipe, providing sweetness and moisture. However, if you need a substitute, you can use evaporated milk combined with sugar (about 3/4 cup sugar per 1 can of evaporated milk), although the texture and sweetness might differ slightly.

These are one of my favorite cookies. I made my own crumbs as suggested and mixed them in a separate bowl, pressed into a pan sprayed with Pam. As far as putting the Sweetened condensed milk on the top or the bottom, I decided to warm the can slightly in hot water to make it more liquid, then I poured half on the crumb crust and the other half over the top, this seemed to do the trick to adhere the crust together and coat the coconut as well. I let them cool for about 30 minutes, then cut them with a pizza cutter, but did not remove them from the pan until the next day this gave them enough time to set up properly and they were easy to remove and maintained their shape.

These are great bars! I've tried several recipes for these bars and here's what I've learned (some after many failed attempts): 1. Don't buy graham cracker crumbs. Use regular graham crackers and crush them yourself. 2. If you have trouble with the butter not soaking through the cracker crumbs, combine them in a small bowl first and then pat them into the pan evenly. 3. The order of ingredients makes a difference in taste. This recipe puts the coconut on last which makes a great toasted coconut top.

This is a delicious combination of ingredients! However, if you follow the directions provided with the Seven Layer Magic Cookie Bars recipe submitted by Eagle Brands, they come out much prettier and easier to cut and eat. It's the same exact ingredients -- just a different method.

The comment to put the butter with the graham crackers is a better instruction. Melt the butter and combine with the graham cracker crumbs then press into the pan. I used pecans, I think I would prefer walnuts. I also layered my pan with parchment paper based on comments. Tip my mom gave me, always make small bites, people generally don’t want to commit to a big sweet, but small is more approachable.

I made these with the following changes: I doubled the recipe, mixed melted butter with store bought crumbs then pressed onto foiled and greased (very important step) 17×11×1 sheet pan, I poured one can sweetened condensed milk over the crust, 1 layer of choc chips, 1 layer of butterscotch chips, 1 layer of pecans and 1 layer of coconut. Finishing with the 2nd can of sweetened condensed milk over the top. The baking time was 6 to 7 min longer so that the center of the pan could get toasted. I was able to lift the bars out of pan easily after cooling on wire rack. The pan was still warm when I lifted them out and I think that's helpful because once the bars are completely cooled the melted ingredients turn into cement almost. Very difficult to get off pan. I cut into bars and stored in an air tight container putting a piece of wax paper in between layers of bars and stored on countertop. Came out delicious as always!

Instead of graham crackers, I crushed up some leftover snickerdoodles with some Club crackers so these wouldn't be so sweet. Worked really well. And like most, mixed the butter in with the crumbs and lined the pan. Didn't have any butterscotch chips, so used more chocolate chips and added some real peanut butter not chips) to the SC milk. Yum!! This also helped to cut the sweetness. Thanks for the recipe.

I love this cookie bar!! I always double the crust and butter to make a thicker crust. I crush the graham crackers instead of buying already crushed ones (makes a difference) I always melt the butter in a separate bowl and mix the Graham cracker crumbs thoroughly in the same bowl before pressing Into the 13x9 pan. I use dark chocolate instead of semi to help cut the sweetness. Make sure to pour the condensed milk BEFORE the coconut that way the coconut will toast in the oven. Soooo good. I always get so many compliments with these.

These bars are like crack. They are soooo delicious. The only thing I changed was the amount of graham cracker crust. The amount given didnt line the whole pan. The recipe calls for 1.5 cups of crushed graham cracker (comes out to 10 full graham crackers) and .5 cups of butter. I added 50% more. So I used 2.25 cups of crushed graham cracker and .75 cups of melted butter. This made the crust an appropriate thickness. I put the crackers in a large ziplock bag and used a rolling pin to crush into powder. Used a sifter to get uniform thickness of the cracker crumbs. Came out great!

I have made this exact recipe many times and given the recipe out as well. I am giving only 3 stars because the first step is crucial.. Crush your own graham crackers, mix with melted butter and press into pan pushing up on the sides a little. I use parchment paper for the pan. It makes everything so much easier. Try it! For my own personal taste, I put the condensed on last because I don't care for overly toasted coconut. But they still toast a little, however everything just stays together so much better.

Super easy to make and taste delicious! I will definitely make these again! My notes: I made it without the walnuts for my friends who are "nut sensitive." The edges stuck like crazy to the pan so I will try using parchment paper next time...or I will slide a spatula along the edge when they're still warm.

Combining the melted butter and graham cracker crumbs and then pressing the mixture into the bottom of the pan is crucial. My original recipe calls for this step. I have always poured the milk over the pan as the last step before baking. They always turn out well this way.

Per a lot of comments I increased the butter and graham crackers. Turned out delicious and I very seldom make anything more complicated than toast.
