Lucy's Quick Tonkatsu Sauce Recipe

Original recipe (1X) yields 4 servings:

  • cup ketchup
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoons dry sherry
  • 1 tablespoons white sugar
  • teaspoon garlic powder
  • teaspoon ground ginger

Directions

Step 1: In a microwave-safe coffee mug or a glass measuring cup, combine the ketchup, soy sauce, Worcestershire sauce, dry sherry, white sugar, garlic powder, and ground ginger. Stir well with a fork to ensure all ingredients are evenly mixed.

Step 2: Microwave the mixture on high for 1 minute. After microwaving, stir the mixture again to help the ingredients blend together.

Step 3: Set the mixture aside and allow the flavors to meld for about 1 hour. This resting time helps the sauce develop a richer, more balanced taste.

I was in the middle of preparing tonkatsu pork when I realized I was out of sauce. After a quick search, I found and tried this recipe. It served as an excellent starting point since I was unsure where to begin. I made some adjustments by adding more Worcestershire sauce and sugar, and substituted fresh garlic and ginger for the powder since I didn't have any on hand. The end result closely matched the flavors I've experienced in Japanese restaurants!

I found that letting this sauce sit for just half an hour before using it was crucial, as the Worcestershire sauce was initially quite overpowering. However, the next day it had mellowed out, although next time I would probably reduce the amount of Worcestershire sauce to 2 tablespoons or even less. Despite this, it still turned out to be a good sauce! It ended up saving the day when I made Chicken Katsu and realized I had run out of sauce.

Replacing Ki****an in my kitchen! I didn't have sherry, so I substituted with marsala wine, and it turned out great. I'm amazed at how simple this recipe is, just like Lucy said, using ingredients I already had on hand. No more buying Tonkatsu sauce for me!

After reading a highly recommended review by laxgmom, I decided to increase the amount of ketchup to 3/4 cup and followed the rest of the recipe closely. The result was a delicious Katsu sauce that rivaled some of the best I've ever tasted, despite only resting for an hour. I'm looking forward to trying it again, this time preparing it a couple of days in advance.

My wife rated this dish based on her previous experience with tonkatsu. Although I didn't use sherry, the sauce closely resembled what she had in a restaurant. It offers a unique flavor that complements chicken katsu very well. I recommend using it sparingly at first until you're sure you enjoy it. I found myself quickly adding more sauce as it grew on me. I look forward to trying it again with sherry to see how it affects the taste!
