Original recipe (1X) yields 8 servings

  • 2 (12 fluid ounce) cans evaporated milk
  • 1 (4.3 ounce) package instant vanilla pudding mix
  • teaspoon almond extract
  • teaspoon pumpkin pie spice
  • 1 pound cinnamon rolls, torn into pieces
  • 1 cups raisins (Optional)
  • cup pecans (Optional)
  • cup butter, cut into small pieces

Directions

  1. Preheat your oven to 350F (175C). Grease a 3-quart casserole dish.
  2. In a large mixing bowl, combine the evaporated milk, pudding mix, almond extract, and pumpkin pie spice. Stir until everything is well incorporated.
  3. Add the torn cinnamon rolls, raisins, and pecans (if using) to the mixture. Stir until fully combined. Let the mixture sit for about 5 minutes to allow the flavors to meld.
  4. Transfer the cinnamon roll mixture into the prepared casserole dish, spreading it evenly. Dot the top with the small pieces of butter.
  5. Place the casserole in the preheated oven and bake for approximately 1 hour, or until a knife inserted in the center comes out clean.
  6. Once baked, remove the casserole from the oven and let it cool for 10 to 15 minutes before serving.
