Original recipe (1X) yields 4 servings

  • 2 cups all-purpose flour
  • cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • 2 eggs
  • 1 (12 fluid ounce) can or bottle beer
  • cup milk
  • cup canola oil
  • 1 teaspoon vanilla extract

Directions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs using an electric mixer for 1 minute. Add the beer, milk, canola oil, and vanilla extract. Mix on low for 30 seconds.
  3. Pour the egg mixture into the flour mixture. Stir gently until just combined, ensuring not to overmix.
  4. Heat a lightly oiled griddle to 400F (200C). Drop cup of batter onto the griddle for each pancake.
  5. Cook the pancakes until bubbles form on the surface and the edges begin to look dry, about 3 to 4 minutes.
  6. Flip the pancakes and cook for an additional 2 to 3 minutes until golden brown.
  7. Repeat with the remaining batter, adding more oil to the griddle as necessary.
