Barbecue Beef Biscuit Cups
Ingredients
- 1 pound ground beef chuck
- cup chopped onion
- teaspoon garlic powder
- 1 cups barbeque sauce
- 1 (10 ounce) package refrigerated biscuit dough
- 2 cups shredded Cheddar cheese
Directions
- Preheat the oven to 400F (200C). Lightly grease 8 muffin cups.
- In a large skillet, cook the ground beef chuck with chopped onion and garlic powder over medium heat. Stir occasionally until the beef is browned and cooked through. Drain excess grease.
- Stir in the barbeque sauce and let it simmer for an additional 3 minutes to allow the flavors to meld together.
- On a floured surface, roll out each biscuit from the package to about 6 inches across. Place each biscuit into the muffin tin, pressing the sides up to form a cup shape.
- Evenly distribute the beef and barbeque mixture into each biscuit cup, filling almost to the top. Sprinkle the shredded Cheddar cheese over the meat mixture.
- Bake in the preheated oven for approximately 15 minutes, or until the biscuits are golden brown and the cheese has melted and bubbly.

I've been making these for years and my recipe is called Barbecups. I don't roll the biscuits out in flour from the refrigerated roll package. I just spray Pam into a cupcake muffin pan, plop the biscuit in and make a well in each biscuit. Add the beef mixture that I also add a couple tbsp's of brown sugar to, and less onion. I put a small chuck of med. cheddar cheese and bake at 400 degrees for about 15 to 18 minutes.

I hate BBQ sauce so I modified as follows:Used 2 whole large garlic cloves, minced. Cooked the onion, then added the garlic before adding the beef, fresh ground salt and pepper. Once beef was cooked (low fat, no draining necessary) added one package of brown gravy mix and 3/4 cup cold water, 3/4 cup frozen corn, 3/4 cup frozen peas, top with cheese and bake. Very tasty.

I started making this in the early 70's, but the original recipe is to just press the biscuits in a 13x9 pan and putting the rest on top. We cut it into squares. There's no problem with getting exact measurements in each cup. The first time we had it my husband and I ate the whole pan. As our family expanded, the servings grew smaller and I was able to feed all 5. My daughter would request it for her birthday. When I made it last year, I used ground turkey and it was still great. The original recipe in a 9x13 was called BBQ Flapjacks.

This was pretty good. It was quick and easy and great for a day that isn't giving you much time to prepare dinner (or lunch). Even though I love barbeque, the sauce was a bit much for me. The next time I made it I used spaghettis sauce instead and topped it with a grated parmesan/Romano blend and fresh mozzarella. Yum!

I used to make these with pie dough about 24 at a time with all kinds of fillings... ham and spinach, egg and bacon, sausage and mushroom... you get the idea. Then I would freeze them and nuke a few in the morning before heading off to work. Giant muffin tins work best. Also, use lotsa cheese to keep them together. I do love the new name... Uglies is way better than Stuffed Breakfast Muffin.

I've been eating these for almost 50 years now. We've always called them biscuit bowls. I like the name Uglies better. These are ok as is, if you skip the bbq sauce. that's just eww. We do these for a snack, kind of like tater skins, for ball game parties or just to munch over a weekend. To make them great, this is what my family has done since i was a child. I've never measured the onion, didn't when i was comparing this recipe to how I've made them over the years, i just use a half of yellow onion and dice it up in about 1/4 inch chunks. I also dice up carrots in 1/4 inch chunks and add a can of peas (drained) to the meat and onion mixture to get some veggies in. cook the carrots for about 5 minutes or so in the skillet, then add the beef and onions and season. instead of gagging on that much bbq sauce, we make a simple roux with 3 tablespoons corn starch, couple ounces of concentrated beef stock and 1/4 cup water add more if needed until the meat and veggies are mixed in the beef sauce well. We use more seasoning also, along with the garlic (fresh is best, i mince up 4 large cloves) we add rosemary and oregano and of course you have to have salt and pepper. I've used different cheeses for the topping also. Mexican Blend is a good one, but i usually just keep it simple with sharp cheddar, i think the flavor goes well with the beef and veggie mix.

I've had a similar recipe for several years that uses sloppy joe sauce instead of BBQ. Also calls for putting a cube of cheddar in first, then the hamburger, than Mozzarella on top. I also add sliced mushrooms.

Great recipe! Blended 1lb beef with 1lb Italian sausage. Added 1 can corn and 1 can olives(affter choping up) fresh garlic minced about five cloves. Mozzarella in bottom and sharp cheddar on top. Hickory bbq sauce.

I have made this twice and I must say it is a hit in my home. The only thing I changed was I added a Serrano pepper; hubby likes spice, less barbecue sauce and sautéed the onions before adding to hamburger. Simple, happy husband and so easy to make. Thank you for the recipe. PS

I had purchased the big can of biscuits (16 oz.) instead of the small biscuits (10 oz.), and, since I absolutely hate washing my muffin pan:):), I rolled out the biscuits and placed them in the bottom of a lightly greased 9 x 13 cake pan. I made sure they formed a solid bottom and went slightly up the sides all around. I used about 2 lbs. of hamburger, added more onion, garlic powder, and added salt and pepper. I also added a little more sauce. I spread all of that over the biscuits and topped with grated cheddar cheese, cooked for a little over 15 minutes, and pulled out of the oven. It was delicious!!!! My husband called it homemade barbecue pizza!

I only had a 7 3/4 oz can of biscuits so I divided the dough in eight pieces. Still turned out great! I used Pam so they all came out of the muffin pan okay. Will make again, maybe with Grands biscuits next time.

I will brown sliced cremini mushrooms and onions then 93/7 ground chuck. I will add black pepper and top biscuits with Gruyere cheese. Yum.

This recipe is fantastic! Can’t seem to get enough even if I double recipe…giess I will need to triple so I have some to freeze. They freeze and reheat perfectly!
