Breakfast Polenta Porridge Recipe

Ingredients:

  • 2 cups water
  • 2 cups almond milk
  • cup dry polenta
  • cup almond meal
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries, sliced
  • 2 pinches ground cinnamon

Directions:

  1. In a medium saucepan, bring water and almond milk to a boil over medium heat.
  2. Gradually add the polenta and almond meal, whisking continuously to prevent lumps from forming.
  3. Once the mixture has come together, reduce the heat to low and stir frequently until the porridge thickens, about 15 minutes.
  4. Stir in the brown sugar and vanilla extract, mixing until fully combined.
  5. Divide the porridge into serving bowls, then top with sliced mixed berries and a sprinkle of ground cinnamon.
