Ingredients

  • 1 teaspoons olive oil
  • 2 slices ham (1/4 inch thick)
  • 2 large eggs

Directions

Step 1: Heat the olive oil in a skillet over medium-high heat.

Step 2: Add the ham slices to the skillet and cook for about 1 to 2 minutes, until they begin to brown.

Step 3: Flip the ham slices over and carefully crack one egg on top of each slice of ham.

Step 4: Reduce the heat to medium-low, then cover the skillet. Let it cook for 2 to 3 minutes until the ham is caramelized, the egg whites are set, and the yolks remain soft.

I found this breakfast to be incredibly easy to prepare, almost as quick as pouring a bowl of cereal and milk. The pre-sliced ham, thinner than expected at 1/8th inch, was a standard smoked variety from the grocery store. Despite Chef John's recommendation for fresh eggs, my slightly older grocery store eggs still turned out well, although the yolks were a bit runny. They may not have looked perfect, but the taste was what mattered. Using large eggs made it a bit challenging to fit them neatly on the ham slices, but the end result was delicious. I cooked mine slightly longer for a firmer yolk, enjoying the caramelized bottom of the ham as the eggs cooked. I unnecessarily added salt to the eggs due to the ham's saltiness. Served with fresh apple slices, this meal was a quick and satisfying breakfast option. Thanks to Chef John for this creative and successful recipe!
