Ham and Cheese Omelette Recipe

Recipe for Cheddar Ham Omelette

Ingredients:

  • 2 teaspoons vegetable oil
  • 4 slices deli ham, chopped into small pieces
  • 2 eggs
  • 2 teaspoons chopped fresh chives, divided
  • teaspoon salt
  • Freshly ground black pepper, to taste
  • cup shredded Cheddar cheese

Directions:

Step 1: Heat the vegetable oil in a skillet over medium heat.

Step 2: Add the chopped ham and cook, stirring frequently, until browned and crispy, about 7 minutes.

Step 3: While the ham is cooking, beat the eggs in a small bowl. Add 1 teaspoon of chives, salt, and freshly ground black pepper.

Step 4: Pour the egg mixture into the skillet. Let it cook undisturbed for 30 seconds, allowing the edges to set.

Step 5: Lift the edges of the omelette so the uncooked egg can run underneath. Tilt the skillet slightly to help distribute the uncooked egg.

Step 6: Sprinkle the shredded Cheddar cheese evenly over the top of the omelette. Gently fold the omelette in half.

Step 7: Flip the omelette and cook for another 30 seconds to 1 minute, until the egg is fully set and the cheese has melted.

Step 8: Slide the omelette onto a plate and sprinkle the remaining 1 teaspoon of chopped chives over the top.

What's not to love in a ham and cheese omelette? I added a splash of milk and a bit more cheese than called for. Delicious!

A very basic but versatile recipe. It is easily modified to different cheese and breakfast meats. I upped the eggs to three and used Spice House’s, “Back of the Yards” season all. Which is similar to Paula Deen’s “The Lady and Son’s Seasoning Salt”.
