Ramen Scrambled Eggs Recipe

Ingredients
- 1 (3-ounce) package ramen noodles (any flavor)
- 1 teaspoon chopped fresh parsley (or to taste)
- 1 tablespoon vegetable oil
- onion, chopped
- 2 large eggs
- 1 teaspoon water (or as desired)
- 1 pinch salt
Directions
Step 1: Bring a pot of water to a boil. Add the ramen noodles and cook for 3 minutes. Once done, drain the water and stir in the seasoning packet along with the chopped parsley.
Step 2: While the noodles are cooking, heat the vegetable oil in a nonstick skillet over medium heat. Add the chopped onion and cook for about 2 minutes until fragrant.
Step 3: Add the cooked ramen noodles to the skillet with the onions. Stir and cook for an additional 2 minutes, allowing the noodles to absorb the flavors.
Step 4: In a bowl, whisk together the eggs, water, and a pinch of salt. Pour the egg mixture into the skillet with the noodles and onions.
Step 5: Cook and stir the eggs with the noodle mixture for 2 to 4 minutes, until the eggs are fully cooked and set.

I've been making this for years, with one exception. I don't use the seasoning packet at all (the beef seasoning makes a great base for homemade sour-cream/onion dip) and throw in a handful of shredded cheese (cheddar or swiss usually).

Other great additions to this would be a chopped very ripe plum or other tomato and a touch of ginger! Tomato & Eggs are a match made in heaven, especially with ginger added to the noodles! Great on pork ramen, especially. Another way to have this is to put a softly fried egg or two on top of the noodles, instead of scrambling the eggs, and a small sprinkle of chopped meat…ham, chicken, whatever…of course, I’d add a tomato and ginger to THAT too! A sprinkle of chopped green/spring onion is a really nice topper also! I just LOVE ramen noodle and egg combinations! Soooooo surprisingly delicious & so satisfying!

I enjoyed this recipe. I used ramen noodles that I purchased in bulk that did not have a spice packet. I add Salt & Pepper, Chinese Chili oil during the cooking process. I also add towards the end diced green onion and cilantro omitting the parsley. topped it with Siracha tabasco sauce and soy sauce. I suggest thinking of this as a fried rice recipe and add your favorites, next time I am adding Thai Basil!

Really fun to have pasta for breakfast! I sautéed bacon, used some bacon renderings to saute the onion, added garlic and chopped fresh spinach and herbs de provence. Then I topped it with Jack chees and put it under the broiler: Delish!

I have to use the Gluten-free Ramen noodles I can get from Costco and I was able to use the Better than Bullion for the flavor. Cooked the rest with the exception of adding minced garlic to the sauté as well. OMG! It's a winner. Having celiac disease makes creativity a necessity & this one brings it! Definitely making it again... wide open for other things to try adding to it!

Ok the concept of this recipe was great, but I changed it a bit... Mostly because of the salt.... Instead of Ramen noodles I used 3 nest of tagliatelle noodles. I cooked noodles then added them to my sauté onions added a small squeeze of ginger two tablespoons of cream of spinach (leftover from the night before) moved everything to the side and scrambled one extra large egg. Once egg scrambled I stirred everything in the skillet. Once plated I added a dash of Parmesan. Total time 20 minutes. Great fast one person meal. I plan on doubling ingredients to fix it for my 7 year old.

This is the second time I made this. The first time I used chicken Ramen and it was just ok. This time I only boiled the noodles 2 minutes as was suggested, I used beef Ramen, and added butter. I also had about a 4 inch piece of zucchini I wanted to use up so I fried that up with the onions for a few minute until the zucchini was cooked then added the noodles and eggs. Really good! I gave some to my uncle and mom and they loved it also. I think there are many more possibilities for this! I will definitely be making it again!

I came across this recipe while searching for something else. Never would’ve thought of putting ramen with eggs. I tweaked it just a bit. Boiled noodles with the seasoning, added some milk to eggs instead of water, no salt, some adobo and not that much onion (my kids don’t care for onions). It was delish! Will be making this again for hubz this weekend.

I used butter and a little touch of soy sauce to sauté the onions. I don't like egg yolks, so I used 3 egg whites. Topped with a little grated Parmesean cheese, salt and pepper. Turned out much better than I expected. I was hoping the whole time that the recipe wasn't a joke and I can happily report, it was not a joke. I will make this again. ::nods head:: Yes, I will. Loved it!! I cooked it about 3-5 minutes with 1TB added butter to give the noodles a crispier texture. Yum yum yum

I used my leftover tapatio origional noodles I had in the fridge as well as some leftover boiled egg that I chopped up and sprinkled in. I also sprinkled origional dash in the egg mixture and I scrambled it in the pan, yummmmm so worth the experiment and now I know what to make for my new breakfast burrito

I enjoy making fried ramen noodles with eggs for breakfast! I cook pieces of bacon and use as like a topping to put in the noodles! So delicious!

We liked the recipe. I liked that it was quick and easy. I use G.F. Organic Ramen made with rice flour. I made my own Ramen Seasoning from a recipe I found online, and added chicken Better Than Bouillon. Before eating, we added Tabasco sauce. Yum!

I used oregano instead of parsley, and added honey into the egg mixture. But the original recipe is just as good

I love how easy this recipe was and the flavor of it wasn't too bland at all. I subbed minced garlic for onion, only used about half the flavor pack and used dried parsley instead of fresh. Next time I would use butter instead of oil though.

I was looking for something intersting to do with eggs and ran across this recipie. It was amazingling good! Using what I had on hand I added sauted mushrooms, bacon crmbles, and sharp cheader cheese. I didn't have an fresh onion so I used a shake of dehydrated onion. I used beef flavored ramen and added the packet after the noodles were cooked and drained. It was really good! What I would tell others who make it...Don't expect scrambled eggs, don't expect ramen noodles, Some folks said it reminded them of fried rice. I would reccomend keeping an open mind and not trying to compare it to anything. It's really good, cheap, and easy, but I have no idea how to describe it.
