Thin Pancakes Recipe
This simple recipe yields deliciously thin pancakes, perfect for a light breakfast or brunch. With just a few ingredients, you'll be able to whip up a batch in no time!
Ingredients
- 3 eggs
- 1 cups milk
- cup all-purpose flour
- 1 tablespoon white sugar
- teaspoon salt
- 1 tablespoon butter, or as needed for greasing
Directions
- Gather all the ingredients before you start. This will make the process smooth and quick.
- In a mixing bowl, beat the eggs using an electric mixer until thick and lemon-colored, which should take about 3 to 5 minutes.
- Slowly stir in the milk to the egg mixture until fully incorporated.
- Sift together the flour, sugar, and salt in a separate bowl. Add this dry mixture to the egg and milk mixture. Stir until the batter becomes smooth and well-combined.
- Next, heat a griddle or non-stick pan over medium heat and grease it lightly with butter. Make sure the pan is hot but not smoking.
- Using a tablespoon, drop spoonfuls of batter onto the hot griddle. Spread each spoonful gently to form a thin layer of pancake batter.
- Cook the pancakes for 1 to 2 minutes or until the bottom is golden brown. Flip them carefully and cook for another 1 to 2 minutes on the other side until its also lightly browned.
- Repeat the process with the remaining batter, greasing the griddle with more butter as needed.

This recipe closely resembles the one passed down from my Mormor to my mom, and I've been making these pancakes for over 50 years now! It requires one less egg, a bit more flour, and half the sugar compared to the original, but the essence remains the same. Initially, I tried making them with just one tablespoon of batter on my cast iron griddle, but I found that using two tablespoons worked better.
