Fluffy Flapjack Pancakes Recipe
Ingredients:
- 2 cups all-purpose flour
- 3 tablespoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- teaspoon salt
- 2 cups milk
- 2 eggs
- cup canola oil
- Cooking spray
Directions:
- Gather all the ingredients together.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until the mixture is smooth and free from lumps.
- Add the milk, eggs, and oil to the dry ingredients. Continue whisking until the batter becomes smooth and runny.
- Heat a nonstick griddle or skillet over medium heat and lightly coat it with cooking spray.
- Working in batches, pour a generous cup of the batter onto the preheated griddle for each pancake.
- Cook the pancakes until bubbles appear on the surface, which should take about 3 to 4 minutes.
- Flip the pancakes and press gently in the center with a spatula. Cook for an additional 2 to 3 minutes until the bottom is lightly browned and the pancake is cooked through.
- Repeat the process with the remaining batter, ensuring each batch is cooked evenly.

For my taste, these were ok. They cooked nicely but I thought they were a bit heavy and blah. I would try less sugar and add some vanilla, or use buttermilk if I were to make them again. I normally use a recipe (it’s more work though) that separates the egg and you fold in the whipped egg whites last. That makes a lighter fluffier pancake for sure.

I would suggest adding a bit less milk, or a bit more flour. The batter is runny and I find it makes the pancakes thin and dense, not light and fluffy. I add 1 1/2, to 1 3/4 cup milk instead of 2, and the pancakes come out super fluffy. Another tip: only flip the pancakes when you see lots of air bubbles popping through.

Cooking times listed are too long. On my electric griddle you can cut the listed time in half.

This was easy to put together. I could tell by the liquid to dry ratio that they would be way to runny for our family so I dropped the milk to 1 3/4 c. I think I could have dropped it more, but for the time being we enjoyed these. I used olive oil due to the fact my Hubby seems to have this obsession with it right now. These came out great.

Super easy to make, I doubled the batch as my family love flapjacks but left out the sugar. Definitely got way more than the expected yield, i got 43 decent sized flapjacks. Guess whats for lunch today...

I made it with no baking soda and it was the bom. I tweaked it a little bit by adding more sugar and vanilla, i also made a coffi and cinnimon bach it was good
