How to Make Scones

Step 1: Preheat your oven to 400F (200C) and adjust the oven rack to the lower-middle position. Line a baking tray with parchment paper to prevent sticking.

Step 2: In a medium bowl, mix 2 cups of all-purpose flour, 1/3 cup of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of baking soda.

Step 3: Grate 8 tablespoons of frozen unsalted butter into the dry ingredients using the large holes of a box grater. Use your fingers to work the butter into the mixture until it resembles coarse crumbs. Then, toss in 1/2 cup of raisins or dried currants.

Step 4: In a small bowl, whisk together 1/2 cup of sour cream and 1 large egg until fully combined.

Step 6: Transfer the dough onto a lightly floured surface and pat it into a circle, about 7 to 8 inches in diameter and 3/4-inch thick.

Step 8: Place the scones on the prepared baking tray, spacing them about 1 inch apart. Bake in the preheated oven for 15 to 17 minutes, or until golden brown.

Great recipe! I used salted cold butter from the fridge and just cut it into the dough. My first batch was made with grated cheddar, second batch with fresh strawberries and my third batch with ham, cheese and green onions (sprinkled cheddar on top) all in 3 days! They went right away and they looked so pretty! This recipe is great as a base - add whatever you want for the flavour of the day!

I wouldn't recommend them if you do not have a food processor since making them as here described seems to be a lot of work. But with a food processor just mix dry ingredients and frozen butter (cut in pieces) in processor, process it a few seconds until well blended, add wet ingredients and pulse it until well blended, add raisins or any other fruits or chips you like, just pulse it a couple of times to mix, take the batter out, pat it flat and cut your scones. The batter needs to be well mixed but do not try to get it smooth – scones are supposed to look crumbly. Easy but so delicious! I omitted the raisins and added butter scotch chips instead - they were a hit. But I'm sure I will try a lot of different add-ons in the future. Great recipe!

What a wonderful scone recipe. These turned out just slightly moist and not dried-out like other recipes I have tried. The addition of the orange zest and cranberries gave them a delicious, subtle sweet flavor. Like another reviewer suggested, I made these in the food processor so the dough came together very well, very quickly. But sticky is an understatement! Be sure you generously flour your work surface, hands, and knife when shaping and cutting these scones. This is the best scone recipe I've tried and it's a definite make-again and again! Update 11/12/07: I have made these scones no less than two dozen times and they are consistently a big hit with everyone, adults and children alike. I will never consider another recipe for scones, this one is the absolute best.

Very moist, tender scone and ingredients and porportions were pretty much perfect. No need to grate the butter folks. Just cube up the butter, add to the flour and mix with your Kitchenaid using a paddle beater on low. After a few minutes, the butter will become pea-size then add your wet ingredients. So easy to make in the mixer. I usually use regular salted butter and add 1 teaspoon vanilla. My favorite combo is making Orange Apricot scones. I add tsp. orange zest to the flour mixture and finely chopped dried apricots. I then make a glaze using orange juice, powdered sugar and orange zest. So moist and keeps well all day. I would suggest eating it all the same day or else it does get dry on day 2. I always get exactly 8 scones, bake for exactly 15 min.

I have used this recipe for years and each time I get compliments! I do add an extra egg. And I do it all with a food processor. Also, I make up several batches of the dry ingredients (flour, sugar, leavening, salt) and butter--processed until it looks like very coarse cornmeal. Then I put each batch into zip bags. And store in the freezer. Then when I want to made scones, I just add the "wet ingredients" and they are in the oven in less than 10 minutes! This basic dry mix also makes it easy to get creative and add different dried fruit or nuts and flavoring. Today I even used bacon pieces and maple-bacon extract. Very good too!

I put the dry ingredients in my food processor & whirl it around to mix. Then I cut up the frozen butter into cubes and pulse it in the food processor until pea size clumps form. Then add the wet ingredients & pulse a few times. I love putting mini tollhouse chocolate chips in, I add those right at the end and pulse about 2 to 3 more times. I make mini scones, so I form 3 smaller, thinner circles and cut them into 6 pieces, so a total of 18 small scones to share. Everybody loves them and they are so quick and easy to make! Sometimes, I'll make them up the night before, wrap in plastic & chill. Cut them up in the morning, bake and bring to work. People think I've spent hours making them!

Really good and easy. Don’t use a food processor, it’s more work because u have to clean it! Cheese grate the butter in 1 min then mix with your hands 1 min. These are not dry which I love. If u like a really dry scone I wouldn’t recommend.

Loved it. I did not use food processor, went with 1 1/2 teaspoon of almond extract, 1 cup dried cherries. Made sure to mix liquids separate . Sprinkled a tablespoon of sugar instead and sprinkled dry roasted almonds on top.Made sure as soon as started to brown on top, took out promptly. WE love them, the girls in our shop loved them. Made them twice, yummm!!

I will make one change the next time I make these. I will pat the dough into a rectangle and cut it into 10-12 squares or cut them in rounds like biscuits. Other than that, this is the best recipe I have found for scones. The entire extended family declared these the very best scones they have ever eaten. After making these several times following the recipe exactly, I have made one change. I mix the dry ingredients together and cut in refrigerator temperature butter. I cut just a couple of times with a pastry cutter, put that in a quart zippered bag and stick it in the freezer. I make several. When I want scones, I put the fruit in the baggie & shake, mix the sour cream, egg, and flavor in a large bowl, dump in the contents of the baggie in the wet ingredients and mix. I keep the unflavored scone mix so that I can whip up scones using one bowl in a matter of a couple of minutes.

I took caljanes advice and used my ninja blender to combine the frozen butter with the dry ingredients till incorporated. Then I poured that into a bowl and added the egg/sour cream mixture and folded until mostly mixed but not holding together totally. I didn't have any raisins so I took some prunes and tossed them w/ some flour and cut them into 1/4" cubes. I added those and a 1/2 cup of chopped walnuts, mixing them in. Then transferred the crumbly dough to a cutting board and using a fork shaped it into a square, sprinkled w/demarara sugar and and cut into triangles. I baked them as directed on parchment paper slid onto a preheated pizza stone and they were fantastic!

This was a fantastic recipe that I will for sure use again. I used my blender to cut the butter into the dry ingredients, and it worked great! Made it go so much faster and with less mess. I mixed cranberries and white chocolate chips into the dough.
