Directions
Step 1: Gather all ingredients. Preheat the oven to 400F (200C) with racks positioned in the middle and lowest positions.
Step 2: Unfurl the pie crust, and using a paring knife, trace the bottom of a 10-inch cast-iron skillet. Discard any trimmings. Fit the trimmed pie crust into the skillet and dock it all over with a fork. Bake in the preheated oven on the lowest rack until the crust just begins to brown, about 15 minutes. Remove from the oven and allow to cool slightly for about 5 minutes. Reduce the oven temperature to 350F (180C).
Step 3: While the crust cools, place the bacon in a large skillet over medium heat. Cook, stirring occasionally, until browned and crisp, about 8 minutes. Transfer the bacon to a paper towel-lined plate to drain.
Step 4: In a mixing bowl, whisk together the eggs, milk, dry mustard, pepper, garlic powder, and salt until fully combined. Set aside.

Step 6: Sprinkle the bottom of the crust with 1/2 cup of cheese and top with half of the cooked bacon. Pour the egg mixture evenly over the top, being careful not to get it on top of the crescent rolls (some egg mixture may flow behind the croissants, but it will bake into the center). Sprinkle the egg mixture with 6 tablespoons of cheese.
Step 7: Bake at 350F (180C) on the middle rack for about 20 minutes, until the crescent rolls are golden brown and the egg mixture is just starting to set.
Step 8: Sprinkle the pie evenly with the remaining 2 tablespoons of bacon and cheese. Loosely tent with aluminum foil and return it to the oven. Continue baking until the sides are golden and the center jiggles slightly, about 20 minutes.
Step 9: Remove from the oven and let the pie sit for 10 minutes. Carefully transfer the pie to a cutting board (or serve it directly in the skillet). Slice into 8 servings and sprinkle with fresh chives before serving.

I’m kicking myself that I didn’t take a picture of it before my teenage daughter‘s friends demolished it! It was definitely a hit in our house. I had to make some modifications since I had a 12 inch cast-iron skillet. First modification I had to make, I had to use an extra croissant from another packet so I had full coverage of the skillet. Second, I almost doubled the bacon and cheese.😜 At least, 1.5 portion. Third, when the skillet came out of the oven from the second round of baking with the aluminum foil, I noticed the croissants were a little undercooked. Instead of baking it longer, I kept the skillet on the same rack and broiled it for a few minutes. This browned the top of my croissants beautifully. Just watch it so you don’t burn it. Since I used a larger skillet, I have some suggestion. Add an extra egg or two to the mixture so you have more egg and height in the pie. I will definitely make this again. Enjoy!

The recipe was really easy to follow. I did not have any pie crust so I used crescent rolls four of them and flatten them out to make the piecrust when they baked. They rose a little bit and I just matched them down again. One thing I will say about this recipe is it’s a lot of bread. You definitely don’t need to have extra crescent rolls or biscuits. But it was delicious. My family loved it.

It was salty. I do not know if it was the cheese or not. Family did not like all of the bread and stated the pie crust on the bottom was not necessary.

I added Pepper Jack instead of the smoked gouda and spiced it up a bit. I am going to try sausage instead of bacon next time. It is super simple and oh so good!!
