Cheesy Ham and Asparagus Bake Recipe

Ingredients

  • 1 cups chopped cooked ham
  • 1 (10 ounce) package frozen cut asparagus, thawed
  • cup chopped onion
  • cup chopped red bell pepper
  • 8 eggs
  • 2 cups milk
  • 1 cup all-purpose flour
  • cup grated Parmesan cheese
  • teaspoon dried tarragon
  • teaspoon salt
  • teaspoon black pepper
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 425F (220C). Lightly grease a 9x13-inch baking dish.
  2. In the prepared baking dish, combine the chopped ham, asparagus, onion, and bell pepper.
  3. In a large bowl, beat together the eggs, milk, flour, Parmesan cheese, tarragon, salt, and black pepper. Pour this mixture evenly over the ham and vegetable mixture in the baking dish.
  4. Bake in the preheated oven for about 20 minutes, or until a knife inserted into the center comes out clean.
  5. Sprinkle the top with shredded Cheddar cheese and continue baking for an additional 3 to 5 minutes, until the cheese has melted.
  6. Let the dish stand for 5 to 10 minutes before serving.

Cook's Note

This recipe can be prepared ahead of time up to Step 2. Cover with plastic wrap and refrigerate overnight. When ready to bake, allow for an additional 15 to 20 minutes of baking time.

Outstanding recipe, although I recommend using fresh asparagus and precooking it for 3 minutes. It also required a longer baking time. I swapped tarragon for basil and added extra cheese for more flavor.

I followed this simple recipe but made a few adjustments because of my egg sensitivity and what I had in my kitchen. Instead of eggs, I used "Just Egg" substitute in the same quantity. I also had some leftover ham so I used a pound of it, and I swapped out the tarragon for a mix of sage and thyme since I didn't have any. The baking time had to be extended due to the egg substitute, but the result was fantastic. Everyone loved it and went back for seconds. I will definitely be making this dish again!

There was an excessive amount of flour, resulting in some parts tasting like dough. Next time, I would recommend reducing the flour by half. Other than that, it was incredibly tasty!

The dish had too much liquid even after following the instructions for baking and letting it stand. It didn't turn out as firm as I had hoped, but it was still tasty. It can be considered a complete meal on its own.

I halved the recipe since it was for a smaller group, and substituted chicken apple sausage for ham since I didn't have any. I browned the sausage first and it turned out amazing! Even my husband, who is a professional cook, absolutely loved it. This recipe is a winner!
