Healthy Ham and Egg Muffins Recipe

Egg Muffins with Spinach and Ham

Ingredients

  • Cooking spray
  • 6 large eggs
  • 1 cups frozen chopped spinach, thawed and drained
  • 1 cup chopped red bell pepper
  • 7 ounces diced fully cooked ham
  • cup egg whites
  • cup crumbled feta cheese
  • 2 tablespoons water
  • Salt and ground black pepper, to taste

Directions

  1. Preheat the oven to 400F (200C). Spray 12 muffin cups with cooking spray or line with paper liners.
  2. In a large bowl, combine the eggs, spinach, red bell pepper, ham, egg whites, feta cheese, water, salt, and pepper.
  3. Evenly distribute the egg mixture into the prepared muffin cups.
  4. Bake in the preheated oven for 20 to 25 minutes or until the muffins are set in the middle.
  5. Allow to cool for 3 to 5 minutes before serving.

This recipe is part of the "Healthy Egg Muffin Formula" used in our magazine. The base formula is as follows:

  • 1 cups diced or crumbled cooked meat
  • 1 cup stemmed, chopped, steamed greens (squeezed dry)
  • 1 cup chopped vegetables
  • cup shredded cheese

To prepare: Preheat the oven to 400F (200C). Mix the meat, greens, vegetables, and cheese together, then divide among 12 prepared muffin cups. In a bowl, whisk together 6 large eggs, cup egg whites, 2 tablespoons water, and teaspoon salt and black pepper. Pour the egg mixture into the muffin cups and bake for 18 to 20 minutes until puffed and set in the middle. Let stand for 3 to 5 minutes before serving.

Formula Variations

  • Spinach & Turkey Sausage Muffins: Ground turkey breakfast sausage, spinach, broccoli, and shredded aged Cheddar.
  • Kale & Chicken Sausage Muffins: Low-sodium Italian chicken sausage, kale, red bell pepper, and crumbled feta.
  • Swiss Chard & Ham Muffins: Low-sodium ham, Swiss chard, leeks, and shredded Gruyre.

This egg muffin recipe is truly exceptional! I swapped out the ham for bacon and replaced the feta (which nobody in my family enjoys) with cheddar. The result was absolutely delicious.

This recipe definitely requires baking for at least 30 to 35 minutes. Avoid using paper, as it turns out more like a quiche. I diced the ham and cooked out the excess grease and water.
