Easy Breakfast Egg Muffins Recipe
Cheddar and Bacon Egg Muffins
Ingredients:
- Cooking spray
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- 8 large eggs
- 2 ounces fully-cooked bacon pieces (such as Oscar Mayer)
- cup whole milk
- 1 pinch garlic powder, or to taste
- 1 pinch onion powder, or to taste
- Salt and ground black pepper, to taste
- (8 ounce) package shredded mild Cheddar cheese
Directions:
- Gather all ingredients to ensure you have everything ready for preparation.
- Preheat the oven to 350F (175C). Lightly grease a 12-cup muffin tin with cooking spray.
- Place the chopped bell peppers and green onions into a large mixing bowl.
- Crack the eggs into the bowl with the vegetables, followed by the cooked bacon pieces, milk, garlic powder, onion powder, salt, and pepper. Mix well.
- Sprinkle the shredded Cheddar cheese into the bowl, then whisk everything together until thoroughly combined.
- Evenly distribute the egg mixture into the prepared muffin cups, filling each one about three-quarters full.
- Place the muffin tin in the preheated oven and bake for approximately 30 minutes. To check if theyre done, insert a toothpick into the center of one muffin. If it comes out clean, theyre ready.
- Allow the muffins to cool slightly before serving. Enjoy your homemade savory treat!

- You can substitute the Cheddar cheese with any shredded cheese of your choice.

The dish was absolutely delightful! I made a few modifications to accommodate my IC diet, such as using red and yellow peppers instead of green, mild cheddar and mozzarella cheese, chopped preservative-free turkey meat seasoned with salt and garlic powder. To prevent sticking, make sure to use plenty of non-stick oil or butter. The outcome was so tasty that I would definitely prepare it again!

Adjusted the recipe by using 10 egg whites instead of 8 and added in leftover breakfast sausage, sautéed mushrooms, and spinach. The muffins turned out beautifully fluffy after baking for about 20 minutes. Planning to freeze half for later.

I tried making them without butter and they ended up sticking to the pan. After reading the comments, I realized that I should have used butter to prevent this. I'll make sure to use butter next time. Cleaning the pan after using olive oil spray was a bit of a hassle. Despite the initial difficulties, the final result was so delicious that I will definitely give it another shot, maybe experimenting with different add-ins. I'm thinking of trying a mushroom and spinach version next time.

I tried the Birdeye Fajita frozen peppers, onions, and sauce, sautéing them according to the instructions. I also added diced ham and taco-seasoned cheddar. Delicious!
