Sheet Pan Mediterranean Frittata

Ingredients:
- 1 (12-ounce) package chicken sausage, sliced into -inch rounds
- 1 cups sliced zucchini
- 1 cup grape tomatoes, halved
- cup diced red onion
- 1 tablespoon olive oil
- 12 large eggs
- 1 cup milk
- teaspoon kosher salt
- teaspoon ground black pepper
- cup crumbled feta cheese
- 1 tablespoon chopped fresh dill
Directions:
- Preheat your oven to 400F (200C).
- Place the chicken sausage, zucchini, grape tomatoes, and red onion onto a rimmed baking sheet. Drizzle with olive oil and toss to combine. Spread the mixture into a single layer.
- Roast in the preheated oven for about 7 minutes, or until the edges are browned.
- Remove the sausage and veggie mixture from the oven and reduce the oven temperature to 375F (190C).
- In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture evenly over the roasted sausage and veggies.
- Sprinkle the crumbled feta cheese on top.
- Return the baking sheet to the oven and bake for 17 to 20 minutes, or until the eggs are set.
- Once done, remove from the oven and sprinkle with fresh dill before serving.
Cook's Note: This recipe is perfect for using up leftover veggies. Feel free to swap in your favorite vegetables. The sausage used here was Al Fresco roasted garlic chicken sausage with onion and herbs, but any chicken sausage variety works great.
