Steak and Egg Hash Recipe

Cook Time: 30 minutes

Ingredients:

  • 1 beef sirloin steak, sliced
  • 1 pound potatoes, cut into small pieces
  • Salt and ground black pepper to taste
  • 1 sweet onion, chopped
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • Italian seasoning

Directions:

  1. Heat a cast iron skillet over medium heat. Add the steak and cook for 4 to 5 minutes on each side. Use an instant-read thermometer to ensure the internal temperature reaches 140F (60C) for medium doneness. Remove the steak from the skillet and set it aside, reserving the drippings in the pan.
  2. Add the chopped potatoes to the skillet, seasoning with salt and pepper. Cook, stirring occasionally, until the potatoes are just tender, about 8 to 12 minutes.
  3. Once the potatoes are tender, add the chopped onion and cook for another 3 to 5 minutes, or until the onions are lightly browned and the potatoes are fully cooked.
  4. Slice the cooked steak into pieces and return it to the skillet. Reduce the heat to low.
  5. Using a spoon, create 4 shallow wells in the potato mixture. Crack an egg into each well. Scatter the halved cherry tomatoes over the mixture and cover the skillet with a lid.
  6. Cook the eggs until the whites are set, but the yolks remain runny, about 6 to 12 minutes, depending on how runny you like your eggs.
  7. Season the eggs with salt, pepper, and Italian seasoning, then serve immediately.

Here is the rewritten version of the review: For breakfast, I decided to get creative with some leftovers from dinner. I had leftover steak and potatoes that I wanted to use up, so I came up with a new breakfast dish. I added freshly minced garlic and fresh rosemary to the mix, omitting the tomatoes since I didn't have any on hand. I topped the hash with soft-boiled eggs, and the combination was absolutely delicious. It was a fantastic way to repurpose leftovers and create a flavorful meal.
