Steak and Egg Hash Recipe
Ingredients:
- 1 beef sirloin steak, sliced
- 1 pound potatoes, cut into small pieces
- Salt and ground black pepper to taste
- 1 sweet onion, chopped
- 4 large eggs
- 1 cup cherry tomatoes, halved
- Italian seasoning
Directions:
- Heat a cast iron skillet over medium heat. Add the steak and cook for 4 to 5 minutes on each side. Use an instant-read thermometer to ensure the internal temperature reaches 140F (60C) for medium doneness. Remove the steak from the skillet and set it aside, reserving the drippings in the pan.
- Add the chopped potatoes to the skillet, seasoning with salt and pepper. Cook, stirring occasionally, until the potatoes are just tender, about 8 to 12 minutes.
- Once the potatoes are tender, add the chopped onion and cook for another 3 to 5 minutes, or until the onions are lightly browned and the potatoes are fully cooked.
- Slice the cooked steak into pieces and return it to the skillet. Reduce the heat to low.
- Using a spoon, create 4 shallow wells in the potato mixture. Crack an egg into each well. Scatter the halved cherry tomatoes over the mixture and cover the skillet with a lid.
- Cook the eggs until the whites are set, but the yolks remain runny, about 6 to 12 minutes, depending on how runny you like your eggs.
- Season the eggs with salt, pepper, and Italian seasoning, then serve immediately.

Here is the rewritten version of the review: For breakfast, I decided to get creative with some leftovers from dinner. I had leftover steak and potatoes that I wanted to use up, so I came up with a new breakfast dish. I added freshly minced garlic and fresh rosemary to the mix, omitting the tomatoes since I didn't have any on hand. I topped the hash with soft-boiled eggs, and the combination was absolutely delicious. It was a fantastic way to repurpose leftovers and create a flavorful meal.
