Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 2 cups leftover mashed potatoes
- Salt and pepper, to taste
- 1 cup shredded cooked corned beef
Directions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion to the skillet and saut until translucent, about 3-4 minutes.
- Transfer the sauted onion to a medium bowl, then add the mashed potatoes and shredded corned beef. Mix everything together until evenly combined.
- Season the mixture with salt and pepper to taste.
- Divide the mixture into 8 equal portions and shape each portion into a patty.
- Return the skillet to medium-high heat and fry the patties until golden brown and crispy on both sides, about 4-5 minutes per side.
- Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
