Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cups leftover mashed potatoes
  • Salt and pepper, to taste
  • 1 cup shredded cooked corned beef

Directions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion to the skillet and saut until translucent, about 3-4 minutes.
  3. Transfer the sauted onion to a medium bowl, then add the mashed potatoes and shredded corned beef. Mix everything together until evenly combined.
  4. Season the mixture with salt and pepper to taste.
  5. Divide the mixture into 8 equal portions and shape each portion into a patty.
  6. Return the skillet to medium-high heat and fry the patties until golden brown and crispy on both sides, about 4-5 minutes per side.
  7. Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
