Chocolate Chip Mini Muffins Recipe

Ingredients

  • Cooking spray
  • 2 cups all-purpose flour
  • cup white sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • teaspoon salt
  • 1 egg
  • 1 cups milk
  • cup vegetable oil
  • 2 teaspoons vanilla extract
  • cup mini chocolate chips

Directions

  1. Preheat the oven to 400F (200C). Lightly spray 48 miniature muffin cups with cooking spray.
  2. In a large bowl, combine the flour, white sugar, brown sugar, baking powder, and salt.
  3. In a separate bowl, lightly beat the egg. Add the milk, vegetable oil, and vanilla extract to the egg mixture, stirring until well combined.
  4. Pour the egg mixture into the dry ingredients and stir until fully incorporated.
  5. Gently fold in the mini chocolate chips, ensuring they are evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin cups, filling each about full.
  7. Bake in the preheated oven for approximately 10 minutes, or until the tops of the muffins spring back when lightly pressed.
  8. Allow the muffins to cool briefly in the tin before transferring them to a wire rack to cool completely.

Recipe Tip

If you prefer to use regular chocolate chips, note that they may sink to the bottom of the muffins. To compensate, reduce the amount of milk slightly.
