Brennan's Irish Soda Bread Recipe

Irish Soda Bread

Ingredients

  • 1 cup milk
  • 2 tablespoons distilled white vinegar
  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • teaspoon baking soda
  • teaspoon salt

Directions

Step 1: In a small bowl, stir together the milk and vinegar. Let the mixture stand for about 10 minutes, allowing it to curdle.

Step 2: While the milk mixture is curdling, preheat your oven to 400F (200C) and lightly grease a baking sheet.

Step 3: In a separate bowl, whisk together the flour, sugar, baking soda, and salt. Gradually add the soured milk to the dry ingredients, stirring until a dough forms.

Step 4: Turn the dough out onto a well-floured surface. Knead it lightly and shape it into a round loaf.

Step 5: Transfer the shaped dough to the prepared baking sheet. Use a sharp knife to cut an "X" on top of the dough. This will help release steam and maintain the loafs round shape during baking.

Step 6: Bake in the preheated oven for about 45 minutes, or until the bread is golden brown and the bottom of the loaf sounds hollow when tapped.

Delicious! I doubled the recipe, included minced chives, and opted to make rolls instead of traditional shapes using a biscuit cutter. Baked for 25 minutes and turned out fantastic!

I modified this recipe to be gluten-free using Bob's Red Mill 1:1 gluten-free flour. I doubled the ingredients and included caraway seeds (1 1/2 tablespoons) and 1/2 cup of plumped raisins. This Irish soda bread recipe is absolutely delightful and simple to make! I have baked numerous soda breads, and I must say, this one is now our top favorite! I stuck to the recipe but opted to bake it in an 8 x 4 loaf pan. The result was absolutely delicious!
