Mom's Zucchini Bread Recipe
Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tablespoon ground cinnamon (or to taste)
- 3 large eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 3 teaspoons vanilla extract
- 2 cups shredded zucchini
- 1 cup chopped walnuts
Directions:
Step 1: Gather all ingredients.
Step 2: Preheat the oven to 325F (165C). Grease and flour two 8x4-inch loaf pans.
Step 3: Sift the flour, salt, baking powder, baking soda, and cinnamon together in a large bowl.
Step 4: In a separate large bowl, beat the eggs, oil, sugar, and vanilla together with an electric mixer until well combined.
Step 5: Add the sifted flour mixture to the wet ingredients and beat until fully incorporated.
Step 6: Stir in the shredded zucchini and chopped walnuts until evenly mixed.
Step 7: Pour the batter into the prepared loaf pans.
Step 8: Bake in the preheated oven for 40 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Step 9: Let the loaves cool in the pans on a wire rack for about 20 minutes.
Step 10: Run a table knife around the edges of the pans to loosen the loaves. Invert carefully onto a wire rack and allow them to cool completely.

This zucchini bread recipe is phenomenal! I made a few tweaks to suit my daughter's taste preferences by omitting the cinnamon and adding milk chocolate chips. For a healthier twist, I substituted half of the oil with applesauce. I brought this bread to a church dinner and it was a hit - one little girl had 5 pieces, while another enjoyed 6 slices!

Excellent recipe! I substituted 1 cup of all-purpose flour with whole wheat flour, replaced oil with unsweetened applesauce, decreased the sugar by 1/2 cup, and used Ener-G egg replacer to make a healthier, vegan version. The bread turned out beautifully moist and delicious!

The recommended baking temperature is not practical. It took 1 hour and 20 minutes for the loaves to be fully baked. I highly suggest baking at 350 degrees instead.

I swapped out the oil for unsweetened applesauce and replaced the nuts with chocolate chips, and the result was absolutely fantastic!

Simple and reliable! When baking at high altitude (6000 feet), I recommend adding an extra 1/2 cup of flour and 1/2 cup of water/milk until the batter reaches the desired consistency. This recipe works well with cream cheese frosting, perfect for transforming it into a cake for birthdays. I have also experimented with various substitutions mentioned by others and have had overall success - it's a fantastic foundation to work with.

Made this recipe with a bit fewer nuts than called for, but otherwise followed the instructions exactly. This recipe is amazing, just like the ones my mom used to make!
