Asparagus Soup Recipe
Ingredients
- 1 pound fresh asparagus
- cup chopped onion
- cup vegetable broth
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 pinch ground black pepper
- 1 cups vegetable broth
- 1 cup soy milk
- cup yogurt
- 1 teaspoon lemon juice
- cup grated Parmesan cheese
Directions
Step 1: Place asparagus and chopped onion in a saucepan. Add cup vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let the vegetables simmer until they are tender.
Step 2: Reserve a few asparagus tips for garnish and set them aside. Transfer the remaining mixture from the saucepan into an electric blender and blend until smooth.
Step 3: In the same pan used for simmering, melt butter over medium heat. While stirring, gradually add flour, salt, and pepper to the melted butter. Be sure not to let the flour brown. Cook the mixture for about 2 minutes.
Step 4: Slowly stir in the remaining 1 cups vegetable broth and increase the heat. Stir continuously until the mixture begins to boil.
Step 5: Add the vegetable puree and soy milk into the boiling mixture. Whisk in the yogurt and then add the lemon juice. Stir until the soup is heated through.
Step 6: Once the soup is hot, ladle it into bowls. Garnish with the reserved asparagus tips and sprinkle with Parmesan cheese, if desired. Serve immediately.
