No Bake Granola Bars Recipe

Peanut Butter Oatmeal Bars

Yield: 12 servings

Ingredients:

  • 2 cups rolled oats
  • 1 cups chunky natural peanut butter
  • 1 cup ground flaxseed
  • cup honey
  • cup dried cranberries
  • cup chocolate chips
  • cup sliced almonds

Directions:

  1. Gather all your ingredients and set them on the countertop.
  2. In a large mixing bowl, combine the oats, peanut butter, flaxseed, honey, cranberries, chocolate chips, and sliced almonds.
  3. Stir the mixture until everything is evenly combined.
  4. Transfer the mixture into a 9x11-inch baking dish. Use the back of a spatula to press the mixture down into an even, flat layer.
  5. Place the baking dish in the refrigerator and chill for at least 1 hour to allow the bars to set.
  6. Once chilled, remove the dish from the refrigerator and cut the mixture into 12 bars.
  7. Wrap each bar individually in plastic wrap for easy storage and freshness.

One word...Amazing. So easy and fast to make. I made sure to mix the peanut butter, honey and flax really well before adding the other stuff. It's hard to mix, I had to use a large, metal spoon and really go at it. Bare hands would be easiest, like with meatloaf. I pressed the mixture into the 9x13 with my hands, it was easier. In case anyone is wondering, like I was, you don't need to spray/butter the dish or use wax/parchment. It will come out of the (glass) dish just fine. Most likely due to the oils in the peanut butter. The recipe says to cut into 12 bars. I cut mine into 20, and next time will make even smaller. These are SO filling. My bars are roughly 3" x 1 3/4". They are packed with flavor and goodness, so these WILL fill you up and the hunger stays away for a long time. Longer than with store bought bars. Great for an on-the-go breakfast or for your mid-morning or mid-afternoon snack. I wrapped individually, put in a tupperware with no lid in the fridge, so they're easy to grab for everyone. You can use any combo of dried fruits and nuts! Oh, I let it sit in the fridge, covered, overnight before cutting (about 12 hours). They tasted best after all the flavors could meld together. These are amazing exactly as written. Easy recipe to alter the mix-ins and change up as you see fit! I have made them as written, ditching the Craisins, adding extra chopped nuts, adding rice Krispies, adding mini M&Ms, endless possibilities. USE A HEAVY SPOON FOR MIXING, THEY ARE VERY DENSE. To make it easier, I roll mine out between two sheets of WAX PAPER using a rolling pin instead of pressing into a pan. Easy clean up! (And you get to pick at the edge pieces as you cut them to shape ) I like to sprinkle a few m&m minis on top for the kiddos, but my batch gets extra nuts and craisins. Such a good recipe. Thank you!

I didn't use any additional nuts, but a little more of chunky PB than called for, and used 1/2 cup corn syrup instead of honey. I stirred and microwaved the syrup and PB for one minute, stirred, and mixed with a big spoon as much as I could, then used my hands. These are great! I put a sheet of wax paper on top and used a rolling pin to get them pressed together well. They held up well after being cut- a pizza cutter works best. Next time I'm gonna use chopped dates.

I'm going to always keep these on hand - they are the first small item that actually satisfies my hunger & keeps me full for 2 or 3 hours plus are healthy, too! Not low-cal, but for a "meal", not bad. I like the high fiber and protein content, and the taste is good, too. I made them as stated, but heated the ingredients in the MWO to make stirring easier (still a JOB!) Because the mix was warm & I used mini chips, they melted into the batter, but the taste was good anyway. I'll try regular sized chips next batch. I froze some, and they were just like fresh when thawed. I packed them a little too hard in the pan, so will go a little lighter next time, so they're softer to eat. This is a very flexible recipe, so long as the consistency is proper with right amount of moisture. I needed a nut-free version to put in my kids' school lunches, so I made the following changes for my first pass at this: I halved the recipe; I used sunflower butter and no peanut butter; I added: flaked coconut, some chia seeds, sunflower seeds, and (because I had no chocolate chips on hand!), a few crunched up kit kat rectangles for chocolate and crunch. I also put the mixture into small silicone molds, and baked 8-10 minutes at 375 degrees. My kids (and husband) loved them. Next time, I am going to add chopped up dried apricot or raisins. Based on how these came out, I think you can throw in whatever your family likes, just make sure you have enough (but not too much) honey and peanut/sunflower butter for moisture, but not too wet. I found the consistency should be akin to a chocolate chip cookie batter before you cook it! Enjoy!

i was looking for something healthy for the kids to snack on instead of chips and junk..i have to say the first time i made these they disappeared before i had the chance to sample them..so the next time made them i doubled the recipe..and again..the y disappeared before i got to sample them..lol..ive been making these now for a few months....every weekend..kids love them..they love making them with me.. and they especially love eating them...lol...i change up the ingredients all the time....so faar there hasnt ben anythng n them the kids dont like!....thank you for the great recipe!..... add on sept 12 2019....after making these for some time now I find that if you wear kitchen gloves like in resturaunts first spray them with a little cooking spray then just use your hands to mix all the ingredients together ...I put a wet paper towel under my baking sheet so the pan stays still wax paper over the granola use a rolling pin to flatten them out put in freezer for about an hour pull out and slice them down ….I I usually get about 50 out of my batches because I double them....after they are cut I put each one into snack bags and they all go into the freezer for the kids whenever they want them..

There are so many other ideas you can do with these. For one, I roll them into bite-size balls. Easier to eat and you feel more satisfied having "several"! I also add toasted coconut, cinnamon and nutmeg, hemp seed, walnuts and almonds, AND for a special taste for the kids, I add two tablespoons of Ovaltine to add a chocolate flavor! It's not that much chocolate at all, and the kids love them. you just mix it with the recipe before rolling. Going to try to add some dried apple next time.

These are awesome! Great with raisins and coconut too. I left out the flax and added about a tablespoon of cocoa. I mixed with my hands and formed them into balls (dip hands in water to keep from sticking). Love them with coffee in the morning or with milk for a healthy sweet treat. Great snack for kids too!

I added two tablespoons of raw cacao powder, half a cup of coconut shavings, and only used a cup of peanut butter. I also ran whole almonds through my Nutribullet for a rough chop. Holy , delicious. I will never buy granola bars as long as I live. Endless possibilities here. Thank you, Jcn.

This is a great recipe! It's so easy to switch out ingredients for your personal tastes. I used natural almond butter instead of peanut butter which was divine. I saw that a few people commented on switching out the honey however raw, organic honey is a superfood! You will be missing out on the all the nutrients and properties of the honey if you skip it. I also added sunflower seeds and goji berries then switched the chocolate chips to cacao nibs (raw chocolate) in mine. I used a mini muffin tin to pack them into and they come out in perfect bite sizes. If you are doing it with your hands instead of a utensil, keep water on your hands. It will allow you to work with the ingredients without everything sticking plus the water seems to keep it held together better. After an hour or so in the freezer, they pop right out of the tin and hold together well. I kept mine in the freezer for work and some in the fridge for immediate enjoyment. These are so filling and healthy. They give me a great boost of energy during that mid-afternoon grind at work. Great recipe! Thank you for adding!

I left out the chocolate chips but added in coconut, and they were very well received. I used half honey and half agave to make them a tiny bit healthier. And toasted whole almonds and added them in as well.

So addictive! Definitely for peanut-butter lovers like myself. I only used 1 cup of peanut butter and it came out a little crumbly (which I expected) so I would recommend using the extra 1/2 cup as directed. I also added two tablespoons of chia seeds which added to the crunchiness! This recipe is definitely a keeper. :)

These bars are very rich. I would actually cut them into 16 or 24 bars the next time I make them. Also, I don't like peanut butter, so I used almond butter. They were fast, easy, and delicious!

I made this once exactly as recipe states and loved it. I then made it another time a little different. Again, turned out great. Changes: Used Chia seed in place of 1/2 C of the flax seed. Used sugar free peanut butter. Used sugar free chocolate chips in place of regular.

Excellent. I used the peanut butter, honey, oats and flax seed amounts as directed but did add a quarter cup more of pb and honey since I had so much ingredient.. I had some Mountain Trail Mix available that I used, took out the raisins, chopped the remaining items, added back in the raisins and added to the mixed honey and peanut butter. Prepared as directed, pressed in the baking dish firmly and let refrigerate overnight. I did use a heavy plastic spoon to mix and press in the dish. Came out perfectly.

The granola came out DELISH but it did not form into bars, it was just a big pile of crumble that needs to be eaten with a spoon. I made them very thin since they’re for my 16 month old. Can someone tell me how to get it into bar form for next time? Double the honey? Double the PB? Make them thicker and double something or add something more?
