St. Patrick's Day Deviled Eggs Recipe

Ingredients:

  • 12 large eggs
  • Green egg dye
  • 2 small stalks celery from the heart, minced
  • cup mayonnaise
  • 2 drops green food coloring (or to taste)
  • 24 small fresh parsley leaves

Directions:

Step 1: Place the eggs in a large saucepan and cover them with water. Bring to a boil, then remove from heat and allow the eggs to sit in the hot water for 15 minutes.

Step 2: After 15 minutes, transfer the eggs to a large bowl of cold water or refrigerate them. Let the eggs cool completely, for at least 30 minutes.

Step 3: While the eggs cool, prepare the egg dye according to the package instructions in a large metal or glass bowl.

Step 4: Gently crack the cooled eggs, but do not remove the shells. This will allow the dye to penetrate the egg whites and create a marbled effect. Work in batches, dipping each cracked egg into the dye for about 5 minutes, or until the color seeps through the cracks.

Step 5: Rinse the dyed eggs under cold water, then peel the shells off to reveal the marbled green effect. Slice each egg in half lengthwise.

Step 6: Scoop out the yolks into a medium bowl and mash them with a fork. Add the minced celery and mayonnaise, mixing until well combined. Stir in the green food coloring to achieve the desired shade of green.

Step 7: Spoon the yolk mixture into each egg half, filling them generously. Top each egg half with a fresh parsley leaf.
