This simple yet flavorful recipe brings together toasted Italian bread, fresh tomatoes, and ricotta salata. A perfect appetizer or light snack for any occasion!

Ingredients

  • 1 loaf Italian bread, cut into 1/2-inch diagonal slices
  • 6 cloves garlic, halved
  • 6 medium tomatoes, seeded and cut into 1/2-inch pieces
  • 1 (4 ounce) package ricotta salata, cut into 1/2-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped fresh basil
  • teaspoon salt
  • teaspoon ground black pepper

Directions

  1. Preheat the oven to 400F (200C). Place the slices of bread on a baking sheet in a single layer.
  2. Bake the bread in the preheated oven until it becomes golden and toasted, about 5 minutes.
  3. Remove the bread from the oven and rub one side of each slice with the cut side of the halved garlic cloves, allowing the garlic to infuse the bread with flavor.
  4. In a large bowl, combine the chopped tomatoes, ricotta salata, olive oil, balsamic vinegar, red onion, fresh basil, salt, and black pepper. Toss everything gently to mix.
  5. Once the bread is ready, divide the tomato and ricotta mixture evenly over the toasted slices of bread, ensuring each piece gets a generous amount of topping.
