Cracklins (Deep-Fried Pork Belly) Recipe

Ingredients

  • 2 quarts oil for frying, or as needed
  • 1 pound pork belly, cut into 1-inch squares

Directions

Step 1: Heat about 4 inches of oil in a deep-fryer or large saucepan to 350F (175C).

Step 2: Fry the pork belly squares in batches until golden brown, approximately 5 minutes. Drain on paper towels.

Step 3: Heat another 4 inches of oil in a separate large saucepan to 425F (218C).

Step 4: Fry the pork belly squares in batches again until the skin "pops," which will take about 30 seconds to 1 minute. Drain on fresh paper towels.

Recipe Tip

These can be stored in the refrigerator and reheated in the oven at 350F (175C) until sizzling hot.
