Jimmy Dean Southwestern Sausage Tarts

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. The original recipe yields 24 servings.

  • 1 (16 ounce) package Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled and drained
  • 2 (15 ounce) packages refrigerated pie crusts
  • 2 cups chunky-style salsa, drained
  • 6 eggs, lightly beaten
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • cup milk
  • 1 cup shredded Cheddar cheese

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: Unwrap the piecrusts and roll each one out slightly thinner than its original thickness.

Step 3: Use a 4-inch cookie cutter to cut circles out of the dough.

Step 4: Gently press each dough circle into the bottom and up the sides of ungreased muffin cup baking pans. The crust should not reach the top of the tin.

Step 5: If needed, re-roll the dough scraps and cut out additional circles.

Step 6: In a large bowl, combine the cooked sausage with the remaining ingredients: salsa, eggs, salt, pepper, milk, and Cheddar cheese. Mix well to combine.

Step 7: Spoon the sausage mixture into each dough-lined muffin cup, filling them about 3/4 full.

Step 8: Bake in the preheated oven for 40 minutes, or until the crust is golden brown and the filling is set.

Tips

Time-Saving Tip: For convenience, you can substitute one 9.6 oz package of fully cooked Jimmy Dean Hearty Sausage Crumbles for one 16 oz roll of fresh breakfast sausage in most dishes.

I substitute pie crust with flaky biscuits by pulling the layers apart to create my crust. Using biscuits reduces the cooking time.

I followed another reader's advice and prepared these the night before, then baked them the next morning to take to work. They disappeared within minutes and received rave reviews from everyone. I only used 2 pie crusts and made 22, so I had leftover filling - I believe the recipe could yield around 30 or more.
