Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. The original recipe yields 60 servings.
- 4 cups all-purpose flour
- teaspoon fine sea salt, divided
- cup olive oil
- cup dry white wine
Directions
Follow these steps to prepare the perfect taralli:
- Combine the flour, teaspoon of salt, olive oil, and dry white wine in a stand mixer. Mix with the paddle attachment until a ball forms.
- Switch to the dough hook and knead the dough for 10 minutes.
- Line a baking sheet with parchment paper and set aside.
- Bring a large pot of water to a boil over high heat and add the remaining salt.
- Spread a large, clean cloth out on a counter or table to place the taralli on once boiled.
- After kneading, pinch off a walnut-sized piece of dough. Roll it into a snake about 2 inches long.
- Shape the dough into a tear drop shape and lightly press the ends together to form a ring. Repeat with the remaining dough.
- Reduce the boiling water to a low boil. Carefully drop the taralli into the water, a few at a time. Do not stir; they will sink initially, then begin to float.
- Once the taralli float, remove them with a slotted spoon and place them on the clean cloth to drain.
- Transfer the boiled taralli to the prepared baking sheet.
- Preheat your oven to 350F (175C).
- Bake the taralli in the preheated oven for about 40 minutes, or until golden and firm on the outside, but still soft inside.
- Cool completely on a wire rack and rest for at least 1 hour before serving.
- Wrap the taralli in a clean cloth or place them in a paper bag. Store at room temperature for up to 1 week.
