It's great; I make it all the time. The only change that I would make is I melt a stick of butter (not margarine) and then cube 2# of velveeta up and add to the butter. Stir until the cheese is melted. The butter makes the cheese creamier. I then add the 1# of cooked and drained "hot" sausage and 1 can of drained rotel. So delicious.

I have actually been making this dip for about 30 years now. However, I use half Velvetta and half White American that I shred myself. Block cheese works better than already packaged shredded cheese because it has additives to keep it from sticking together in the package. It comes out greasy. I also cook the sausage first. Drain the grease from it, Dump ithe sausage, the Rotel and all the cheese into a crock pot, I add 2 cups of milk and let it cook for about an hour but it can stay on warm for hours. That way the dip is always warm because there is nothing worse than cold cheese dip, it gets clumpy. If you want to make it more festive, you can add jalapeno's, I use jar jalepnos and just chop them up, if I use a fresh jalepno I cook it with the sausage by slicing in half lengthwise, taking seeds out and finely chopping then add to sausage to cook. For a fluffier cheese dip you can add half a package of cream cheese. You can also substitute the sausage for chicken, shrimp, crabmeat, hamburger or any meat. It is always delicious.

I made this with ground beef and mexican velveeta. It was very good. The next day I reheated the leftovers and added penne pasta. Had some very good mac and cheese

This is a GREAT "Basic" recipe. I made two (2) batches last weekend for a "Welcome to Springtime" Neighborhood Block Party: the 1st batch I made "as written" and the 2nd batch I made given "tweaks" [melted 1/2 stick of Butter, added some Whipping Cream (to reach the consistency I wanted when melting the Velveeta), added 1/2 (very) finely chopped Onion, a "shake" of Worchester Sauce, and some Garlic Powder]. BOTH versions were well received and gone before the 4-hour "event" was concluded. [NOTE: If I were making this for either my own Family or some "Family Event", I would NOT use Velveeta (or any other "pasteurized product") but would use either Cheddar, Colby Jack, or Pepper Jack Cheese (melted along with the Butter and Whipping Cream) in its stead; just my preference on account of fewer preservatives) But I WOULD include my "tweaks".]

Making this for years. I do a pound of sausage per pound of Velveeta. You need to use hot sausage as well as hot Rotel. To change things up I also like 2 pounds Velveeta, One pound Hot Sausage, One pound Maple Sausage, one Hot can and one Regular can of Rotel. The sweet and spicy is fantastic!

This is basically the same recipe we've been making for 40 years, using Ro-Tel, Velveeta and Hamburger. I would have given it 5 stars, except it's been around 40 or 50 years. It's an old concoction. We used to even make it with Chorizo, sometimes. We'd have some freshly made warm tortilla chips with it. You can still take a bag of store bought tortilla chips and warm them. Ro-Tel didn't have the green chilies back then or all the varieties, but it was still great. I liked sprinkling fresh chopped cilantro on top, but not everyone has a taste for it. Leave it off, if some people don't like it. Sometimes, we still make it and use Real Bacon Bits from Sams Club. You can buy a big bag of them cheap and they work great. We've also mixed it up, put some frozen fries in the air fryer and poured this on top. It's a complete meal or great Game-Time Yummy!! Little Time and Lots of Flavor!!

Added a package of cream cheese and cooked it all on the stove in the same pan. Makes it thicker. I don't even like sausage and I absolutely love this along with everyone who tried it. Always getting asked for the recipe!!

I love this recipe and make it a lot for get togethers. I also add a can of Hormel Chili without beans to the mix with some garlic powder and a shake of Worstershire sauce. If I want it a little spicier I add a LITTLE cayenne pepper.

I have made this recipe for 40 years, except I use chorizo sausage, and add some shredded pepper jack cheese, the Rotel tomatoes with Jalapenos to the ingredients listed. I put it all in my crock pot. A hit anytime you want a snack to serve.😊

I love a chunky queso, so I added two cans of black beans, two cans of pinto beans, two cups of kernel corn, one onion diced, one small can diced green chilies, and used Jimmy Dean Hot Sausage. My family loves it and I've been asked for the recipe multiple times. Yum!!

I’ve been making this dip for over 20 years, great for crowds (easily doubled) spiciness is easily adjusted by using mild ro tel, I have subbed in leftover taco meat instead of sausage, I have subbed cheddar for a fourth of the velveeta for more cheese flavor and I’ve added extra green Chili’s before. It’s something u can’t mess up, it’s going to be great no matter what you do! Just use what u have or what u like!

We love but I use 1# hot pork sausage and use additional Velveeta. The leftovers we use to make a baked pasta casserole (rotini cooked al dente) mix together and top with melted buttered panko crumbs and bake for 20 - 25 min at 350 and delicious. Family lives and I just add a salad ! Just a thought ;)

This is one of my favorite go-to recipes, but since my husband and his family are vegetarians, I make it with Morning Star sausage (frozen log) and had lil bit of cream cheese, Nobody Ever believes me when I say it has vegetarian sausage! Can't go wrong with this recipe!

I’ve not made this exact recipe but I’ve been making an identical one for years so I know this is THE perfect dip. Instead of Rotel tomatoes I use a jar of medium black bean and corn salsa but you can use and spicy level or style of salsa in place of rotel. I actually started making mine as a way to tame down some extremely spicy homemade salsa.
