A spicy delish alternative to the average dip. To make more “cowboy” I use chorizo and spice up more with fresh Serranos only need 2 or 3. Serve with blue corn chips. Yum.

This was a delicious and easy dip to put together. My contribution to make this better is adding 1/2 pack of chopped bacon. Also upped the amount of cream cheese, sharp cheddar, and sour cream. Was absolutely delicious. Have fun making this wonderful dip.

Everyone loved this dip! (baked) We felt like it had the perfect amount of just a little kick! We'll definitely be making this again! A few changes I made: - instead of link hot sausage, I used 1 lb fresh mild Italian sausage (added pinch crushed red pepper & pinch cayenne pepper while browning) - I used one 14 oz can of regular fire roasted tomatoes - I omitted the fresh jalapeño, any additional cayenne & didn't add salt

Tried this recipe for New Years Day and it was another Chef John winner! Simply superb. For the next time I think I'll make it with Hot Jimmy Dean breakfast sausage and add some caramelized onions just to change things up. Keep em' coming Chef John!

Made this for a New Year's party and it was a HUGE hit! It did seem like a lot of dip, but it was gone! I was told by the host this is my new signature recipe. Things I needed to correct for: I had sweet sausages so I threw in a Tbsp of Tabasco for heat, couldn't find Hatch peppers and it was too late to go shopping for a viable alternative, so that was a pass, and my roasted tomatoes had no chiles, so we threw a mini can of chiles in to make up for it. Next time I'd use roasted corn. We added some Liquid Smoke for interest. 5* as is! I love the flexibility of this recipe. Enjoy!

Made this with only 8 oz whipped cream cheese, half the other cheeses, jar of sliced hot jalapenos and jar of Howard's sweet pepper sauce instead of tomatoes. It was enjoyed by all while watching football on New Year’s Day. (Allergy to tomatoes).

Flavorful but not much bite if you like spicy heat. Wish I had added more Jalapeno or a Serrano. Definitely will do it again and again! Liked how it makes a good quantity.
