Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 2 quarts chicken broth
- 1 cup clam juice
- 1 cup unsalted butter
- (6 ounce) can tomato paste
- 2 tablespoons minced rosemary
- 5 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1 teaspoon celery seeds
- teaspoon fennel seeds
- 1 cup white wine
- 2 pounds shrimp, with tails
- 1 (1 pound) loaf French bread
Directions
Step 1: In a large pot, combine the chicken broth, clam juice, butter, tomato paste, rosemary, garlic, black pepper, celery seeds, and fennel seeds. Bring the mixture to a boil over medium heat.
Step 2: Once boiling, reduce the heat to low and allow the soup to simmer for 1 hour. Stir occasionally to ensure all the ingredients blend together nicely.
Step 3: Add the white wine to the pot, stirring it into the soup. Continue to simmer for an additional 2 hours, stirring occasionally to prevent sticking or burning.
Step 4: Once the soup has simmered for 2 hours, add the shrimp to the pot. Cook the shrimp until they turn opaque, which should take around 3 minutes.
Step 5: Once the shrimp is cooked, remove the pot from the heat. Serve the soup immediately with slices of French bread on the side for dipping.
