Chocolate Scotcheroos Recipe

Ingredients

Bars:

  • Cooking spray
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter
  • 6 cups Kellogg's Rice Krispies cereal

Topping:

  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Directions

Step 1: Spray a 9x13-inch baking dish with cooking spray to prevent sticking.

Step 2: In a 3-quart saucepan, combine the corn syrup and sugar. Cook over medium heat, stirring frequently, until the sugar dissolves and the mixture starts to boil.

Step 3: Remove the saucepan from the heat and stir in the peanut butter until the mixture is well combined.

Step 4: Add the Rice Krispies cereal and stir until every piece is well coated with the peanut butter mixture.

Step 5: Press the cereal mixture firmly into the prepared 9x13-inch baking dish, spreading it evenly.

Step 6: In a 1-quart saucepan, melt the chocolate chips and butterscotch chips over low heat. Stir constantly to prevent burning.

Step 7: Once the chocolate and butterscotch chips are fully melted, spread the mixture evenly over the top of the cereal bars.

Step 8: Allow the bars to stand at room temperature for about 20 minutes, or until the topping has set and the bars have firmed up.

Step 9: Cut the cooled mixture into 24 squares or bars.

Recipe Tip

If desired, you can substitute Kellogg's Cocoa Krispies cereal for the regular Rice Krispies for a chocolatey twist.

Following the advice of others, I started mixing as soon as the syrup came to a boil, and I didn't encounter any problems with the krispies becoming too hard. I found that reducing the amount of chocolate and butterscotch chips on top worked better for me as it felt like too much with the full amount. As per recommendations, I also added butter to the chips to make them more spreadable, which made a big difference. Tasty! I love to sprinkle chocolate and butterscotch chips on top and then place it under the broiler for a few seconds to melt. Afterwards, I spread it gently with a butter knife. So simple and delicious!
