What Is Boxty?

Boxty are traditional Irish potato pancakes. Made from a mixture of grated raw potatoes, mashed potatoes, flour, eggs, milk, and seasonings, these pancakes are fried until golden and crispy. While they can be enjoyed all year long, boxty is particularly popular around St. Brigid's Day.

Boxty Ingredients:

  • 1 cups grated raw potatoes
  • 1 cup all-purpose flour
  • 1 cup leftover mashed potatoes
  • 1 large egg
  • 1 tablespoon skim milk
  • Salt and pepper, to taste

How to Make Boxty:
