Sauteed Leeks in Butter and White Wine Recipe
Ingredients
This recipe was created to yield 6 servings. Quantities adjust automatically for different yields, but cooking times remain the same. Note: scaling may not always be perfect.
- 3 large leeks
- 3 tablespoons unsalted butter, divided
- 2 tablespoons dry white wine
- Salt, to taste
- 1 sprig fresh parsley, for garnish (optional)
Directions
Step 1: Trim the leeks about 1/4 inch above the roots. Check carefully for any soil. If soil remains, trim an additional 1/4 inch.
Step 2: Remove the dark green outer leaves and inspect again for dirt. Peel away the outer layer of the white portion, which can be tough. Set aside the green sheaths if you wish to use them for seasoning.
Step 3: Slice the leeks lengthwise into thin strips, approximately 1/4 inch wide (julienne style). If soil is present, place the slices in a colander and submerge in water, swishing gently. Let sediment settle, then drain and pat dry.
Step 4: In a non-stick skillet over medium heat, melt 2 tablespoons of butter until foamy. Add the leeks and stir continuously for about 4 minutes until they begin to soften.
Step 5: Pour in the white wine and cook for an additional 1 minute, until the leeks are tender.
Step 6: Remove the skillet from heat. Stir in the remaining butter and season with salt. Garnish with fresh parsley before serving.
Cook's Note
Some leeks may already be clean and not require rinsing. If dirt is present along the length of the leek and cannot be cut away, washing thoroughly is essential to avoid grit.

Fantastic recipe! This makes a fantastic side dish! I served it with Baked Caesar Chicken from this website, but I can imagine it would also pair well with pork chops, steak, or fish. The most time-consuming part is cleaning the leeks. I chopped them into half coins instead of julienne and used Chardonnay instead of wine. Thank you, Bibi! This is a winner!
