Grandma's Cucumber and Onion Salad Recipe

Pickled Cucumber Salad

Ingredients:

  • 7 cups sliced cucumbers
  • Salt, as needed
  • 1 cup thinly sliced onions
  • 1 cup sliced green bell pepper (Optional)

Dressing:

  • 2 cups white sugar
  • 1 cup white vinegar
  • 1 tablespoon celery seed (Optional)
  • 2 teaspoons salt, or to taste

Directions:

  1. Step 1: Start by gathering all the ingredients you will need for the salad and the dressing.

I love this salad! I don't care for celery seed though, so the only thing I did differently was to swap it out for a little bit of fresh dill. So easy, so yummy!

I found this recipe when I was feeling nostalgic about my grandmothers cucumber salad (circa 1960's NE Iowa). But then I decided to go my own way. 1) I used mini cucumbers to make the size more palatable 2) I added in mini red, orange and yellow peppers to the green pepper all diced to 1/4" or less 3) switched to red onion for a sharper flavor 4) halved the sugar - i.e. 1 cup instead of 2, as all medical advice seems to have us be mindful of sugar intake 5) Instead of celery seed I used actual celery, also diced to 1/4". Turned out yummy.

I have been making this salad for 65 yrs,I love ground celery seed and dill in mine,the only thing i do differently is when the cucumber start getting watery,I just squeeze them in my hands to get excess water before adding all ingredients,i find red onion tastes best in this cucumber salad.also do variation and use sour cream and use less vinegar,but add the rest of ingredients

This is a great starter recipe. It's easy to adjust to your liking. I used cider vinegar instead of white, I also used cherry tomatoes quartered instead of peppers and I blended in 3/4 cup of real mayonnaise (Dukes).

Way too much sugar. If it try it again, I'll only use 1/2 cup of sugar.

Made it for my sister's bridal shower and it was delicious ! Maybe I'd cut back on the sugar if I make it again for my family or myself. I also added red and yellow peppers and red onion to make a lovely colourful dish. I was also able to prepare it the night before - BONUS!

Just like “back in the day!” I don’t recall that much sugar; but then, I was 8, and it was the 70’s. (The decade of fructose corn syrup, captain crunch, frootloops, sugar smacks and coco-puffs!) Enjoy as is. Then cut back the sugar on your second try (like an adult). 😂

My mom made this recipe. But she used one cup each of water, vinegar, and sugar. She added either mini tomatoes or sliced tomatoes. She would peel the cucumbers, slice and place in cold salt water. Drain then add the vinegar, sugar, water. It was always decious!

I made this for a carry in dinner at work. It was very easy and everyone loved it. I cut out about a half cup of the sugar and used fresh dill instead of the celery seeds. We had a lot of food left over at our dinner but none of the cucumber salad was left!

We love this recipe in our house! I generally cut the "sauce" part in half, as we end up tossing at least that much, if not more. We don't generally like the flavor of celery seed, so I'll often add dried dill instead (not much, maybe 1/4 to 1/2 t). Very yummy!

Refrigerator Pickles are awesome. This recipe has WAY too much sugar. Try 1/2 c sugar to 1 cup apple cider vinegar.

I loved the recipe as is. I disagree with some of the comments as to cut down on the sugar! My family loves the sweetness. It's like the pickled cucumbers and onions that they serve at our local Thai restaurant.
