Thai Cucumber Salad
This light and vibrant cucumber salad is a perfect balance of crunchy, tangy, and spicy flavors. A great side dish for any meal, it's quick and easy to prepare with just a few fresh ingredients!
Ingredients
- 3 large cucumbers, peeled, halved lengthwise, seeded, and cut into -inch slices
- 1 tablespoon salt
- cup white sugar
- cup rice wine vinegar
- 2 medium jalapeo peppers, seeded and chopped
- cup chopped cilantro
- cup chopped peanuts
Directions
- Place the sliced cucumbers in a colander and toss them with the salt. Let them drain in the sink for 30 minutes to draw out excess moisture.
- After 30 minutes, rinse the cucumbers under cold water, then pat them dry with paper towels to remove any remaining water.
- In a mixing bowl, whisk together the sugar and rice wine vinegar until the sugar is completely dissolved.
- Add the cucumbers, chopped jalapeos, and cilantro to the bowl. Toss everything together until the cucumbers are evenly coated with the dressing.
- Before serving, sprinkle the chopped peanuts over the salad for added crunch and flavor.

This was just like the restaurant's peanut cucumber salad that I always order. The only difference is that they also serve it with some shredded carrots and chopped red onion which I added. It's more sweet then spicy so if you want a little more zing then sweet, I suggest that you add an extra jalapeno and cut the sugar by 1/3. I will definitely make this again.

I'm not a jalapeno fan so I made this without the pepper and added sliced onion and matchstick carrots. It was great and my husband has requested it tonight while entertaining his boss. I will add to make it just before serving so that the cucumbers don't shed their water and make it soupy!

Other than leaving out the jalepenos because I have a kid that can't handle the heat, I made this as written. I think the dressing is far too sweet and there far is too much of it. Next time I will certainly cut the dressing in half which should solve both problems.

Very delicious salad and easy to make. I made the following changes: (only because it's what I had on hand) I used English Cucumber, omitted the jalapeno and replaced it with crushed chili flakes, used cashews instead of peanuts and added a hand full of shredded carrots and 1 thinly sliced green onion. I also made the dressing and let the carrots, green onion and chili flakes pickle in it while the cucumber sat in the sink half hour.

I went to a Thai restaurant recently and was served a small bowl of this salad. It was delicious, so I went on the hunt for a recipe. I mimicked the restaurant's recipe, using cucumbers, red peppers and red onion. Next time, I may reduce the sugar a bit. I am going to try the recipe as written at some point.

I lived in Thailand for 6 years and now I struggle to find food that has just the right taste that I am looking for. This was very authentic and delicious. I made a few changes to suit my preferences- doubled the jalapeno, used slightly less sugar and added thinly sliced carrots and red onion. I will definitely be making this again.

Very good on a hot day! Took it to a picnic and people liked it and asked about it. But I agree that the dressing is a bit thin. I even reduced the vinegar by half. Like some others, I used Italian noodles (spaghettini). I have bought some udon to make it again, and I think the dressing will work better.

I've made this several times now and it always receives raves when I bring it to potlucks. The only change I make is to only use a quarter cup of rice vinegar, and between an eighth cup and quarter cup of sugar. I find using half cup of each produces way too much dressing for the amount of ingredients, and is too sweet for my taste.

Add shredded carrot, use red pepper flakes instead of jalapenos. Drizzle with sesame oil at the very end. Soooo good.

This was great! I did not have the correct vinegar on hand, and used apple cider vinegar, and it worked well. It’s very simple, fast, and doesn’t take hours of marinating as some cucumber recipes do.

I had a bag of coleslaw mix and used that as an addition to the salad . Along with a few chunks of fresh pineapple. The salad was bursting with flavour . Its a welcome addition to any dinner table !

This salad has become my go to salad that I am asked to bring to every gathering. I use cucumbers fresh from the garden which makes it even better! I do add just a touch of sesame seed oil to the dressing.

EXCELLENT!! Only and small changes; I added a half, red bell pepper chopped to add some “pretty” color and a few green onions minced. Could not get enough of this! Served with Teriyaki Pork Tenderloin from this site and the two dishes paired perfectly! Although- I loved this salad enough to make again and on its own! Thanks camp0433!
