Made this tonight for my daughter who is always raving about the Caprese Salad where she works and claims to never be able to get enough of it. I served the salad on a bed of fresh baby spinach and garnished the sides with avocado. I also added one clove of minced garlic to the dressing which made for a beautiful and satisfying salad. I have made this twice now and it is just delicious. This time I only had one tomato, but I had a whole bunch of grape tomatoes from my garden. I sliced the tomato and alternated the tomato with mozzarella slices in the middle of the plate and halved the grape tomatoes around the sliced tomato with bits of mozzarella on each half. I used aged balsamic vinegar in the dressing. Just divine.

Same ingredients, different presentation can boost the flavor for those who found it lacking. Only "real" tomatoes - homegrown or farmers market, heirloom preferred. Instead of "side-stacking" as shown, arrange individual slices on plate/platter and salt/pepper to taste. Top with cheese, drizzle w/oil & vinegar and garnish with torn basil leaves. I sometimes drizzle w/just the oil and "flick" the balsamic vinegar on with a pastry brush.

This recipe is for the straight forward, traditional, Caprese Salad. IF you so desire, you may add some Italian Seasoning to the EVOO & Balsamic vinegar while mixing. Personally, I do like to add a small clove of fresh finely minced garlic & a light pinch on of pepperoncini. (Red pepper flakes). DO use a good amount of FRESH basil. You can make the "dressing" ahead of time, but please bring to room temp before applying to the tomatoes and sliced mozzarella. Costco does have some pre-sliced mozzarella, which allows for extremely quick prep, and the quality is surprisingly good. Serve with lightly toasted/grilled Italian or French bread slices. IF you are looking for a slightly "drier" presentation, slice the FRESH tomatoes, lay on paper towels, lightly salt both sides, rest for 5-10 minutes, then pat them dry with additional paper towels. It intensifies the flavor and draws out some of the liquid. IF using the pre-sliced mozzarella I recommend patting it dry before use. This can be easily modified to your family's preference. As it stands, it is a very long tried and true recipe, for good reason.

I regularly use this recipe with some additions . I double the dressing and add a clove of garlic and some fresh basil and blend with my immersion blender then serve it all over greens of your choice and add some garden cucumbers and peppers chopped small for a little extra pizzazz!! Presents beautifully and never disappoints!!

I have been making this for years! Can't wait every summer for fresh locally grown tomatoes. This salad is the best! This recipe neglects to specify that it's FRESH mozzarella that is the ingredient. The picture shows it, but if you have never made it, you might not know.

I used my home brewed apple cider vinegar, in place of balsamic which can be overpowering. Black Krim tomatoes from the garden also help with their big flavor.

Needs a lot more basil. We drizzle the olive oil and balsamic vinegar (use the good stuff) over the tomatoes and mozzarella. And the best part is dredging a piece of toasted baguette in the juices. Truly a summer time special. And we just call it as the Italians do. Caprese Salad.

i am a good cook ...my bruchetta and caprese gets raves......dump the vinegar and dump it in pasta salad ( it slaughters the macaroni) seasoned good olive oil doesn t need any help ....

Very good side for a crowd. When I was out of balsamic I replaced with fresh squeezed lemon juice. That works, too! I also have added chopped green onions, thinly sliced red onion and chopped Kalamata olives. So much you can do with ingredients you have on hand!
