Bagel Sandwich with Vegetables
Ingredients
- 1 bagel, sliced in half
- 1 tablespoon coarse-grain brown mustard
- 1 leaf romaine lettuce
- 2 (1/4 inch thick) rings green bell pepper
- 4 slices cucumber
- 2 slices tomato
- Salt and freshly ground black pepper to taste
- 2 slices red onion
- cup alfalfa sprouts
Directions
- Spread the coarse-grain brown mustard evenly onto the cut sides of the bagel.
- Place the romaine lettuce, green bell pepper rings, cucumber slices, and tomato slices on one half of the bagel.
- Season the tomato with salt and freshly ground black pepper to taste.
- Top the vegetable layer with red onion slices and alfalfa sprouts.
- Cover the sandwich with the other half of the bagel to complete the sandwich.
