Bagel Sandwich with Vegetables

Ingredients

  • 1 bagel, sliced in half
  • 1 tablespoon coarse-grain brown mustard
  • 1 leaf romaine lettuce
  • 2 (1/4 inch thick) rings green bell pepper
  • 4 slices cucumber
  • 2 slices tomato
  • Salt and freshly ground black pepper to taste
  • 2 slices red onion
  • cup alfalfa sprouts

Directions

  1. Spread the coarse-grain brown mustard evenly onto the cut sides of the bagel.
  2. Place the romaine lettuce, green bell pepper rings, cucumber slices, and tomato slices on one half of the bagel.
  3. Season the tomato with salt and freshly ground black pepper to taste.
  4. Top the vegetable layer with red onion slices and alfalfa sprouts.
  5. Cover the sandwich with the other half of the bagel to complete the sandwich.
