Homemade Beef Jerky Recipe
This homemade beef jerky is packed with flavor and incredibly easy to make. Perfect for snacking or adding to your next adventure, follow these steps for a delicious, savory treat.
Ingredients
- cup Worcestershire sauce
- cup soy sauce
- 1 tablespoon smoked paprika (or to taste)
- 1 tablespoon honey (or more to taste)
- 2 teaspoons freshly ground black pepper
- 1 teaspoon red pepper flakes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 pounds beef top round, thinly sliced
Directions
Step 1: In a large bowl, whisk together Worcestershire sauce, soy sauce, smoked paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder until well combined.
Step 2: Add the thinly sliced beef to the bowl and mix until each slice is fully coated with the marinade.
Step 3: Cover the bowl with plastic wrap and refrigerate the beef for at least 3 hours, or up to overnight, to allow the flavors to meld together.
Step 4: Preheat your oven to 175F (80C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top to elevate the beef.
Step 5: Remove the beef from the marinade and pat dry with paper towels. Discard the marinade.
Step 6: Arrange the beef slices in a single layer on the wire rack, ensuring that they do not overlap.
Step 7: Place the baking sheet in the preheated oven and bake the beef for 3 to 4 hours, or until the jerky is dry and leathery. The baking time may vary depending on the thickness of the slices and the moisture content of the beef.
Step 8: Once done, remove the beef jerky from the oven and let it cool for a few minutes. Using scissors, cut the jerky into bite-sized pieces.
Step 9: Enjoy your homemade beef jerky! Store it in an airtight for up to a week, or refrigerate it for longer shelf life.

Really easy to make!!! I get why dried beef is so expensive now...this was not a cheap build but the best jerky I've ever had. One pound of London broil (cut while still partially frozen to make it easier to make thin slices) made 6 ounces of jerky but wow, it's great! And so easy to make!

This was a great base recipe for us but we made a few tweaks which is why I gave it 4 stars instead of 5. We reduced the Worcestershire to 1/2 C. and added 2 Tbsp. more of brown sugar and also added Texas Pete to preference (maybe 2-3 Tbsp). We also used a dehydrator at 160 for about 10 hours after marinating over night. It turned out beautifully! We eat a lot of jerky so this may become a regular!

I followed the recipe and since I like spicy jerky, I added some cayenne pepper (about 1/2 tsp) and sliced jalapenos to the marinade. I marinaded the meat for 3 hours and used my food dehydrated instead of baking it. Before putting in the dehydrator, I added more red pepper flakes to some and fresh cracked pepper to others --we're all about spicy here. This was my first go on beef jerky and it turned out incredible. My entire family loved it. I'm making my second batch tonight. This time I added 1 tsp of cayenne pepper and several dashes of Tabasco sauce. I plan on added the pepper flakes and black pepper again, too. I'm not a big fan of that smoked flavor, but the smoked paprika added just enough flavor and wasn't overpowering at all. All in all, this was a delicious marinade that I plan on using it as my go-to for jerky.

Just had my new Kogan Electric Food Dehydrator 5 tray Delivered today, Purchased 2Kg Rump Butcher cut at around 15mm smashed it with meat mallet used this base marinade plus I added 2 cloves of garlic & 2 long red chillis finely chopped How good is this base recipe I keep adding Dry Chilli & harissa Paste every 2 hrs to marinade I'm on my 3rd tray two Trays to go, I will never buy a pack of retail Jerky again, I'm letting sit overnight & will Dehydrate leftovers tomorrow, So Good is this recipe

I follow this recipe exactly using my my Weston 10-tray dehydrator set at 155 degrees. After 4.5 hrs it was perfect. I let the meat marinade for 12 hours in the fridge. I found the Worcestershire to be a dominating flavor. Next time I would use less Worcestershire and double up the honey and pepper flakes for more kick.

I've been buying homemade jerky for years as a healthy snack and while great tasting, it's a bit pricey. So when I found this easy-sounding recipe, I decided to give it a try. I'm so glad I did! It is easy and tastes yummy. I used top round, cut it into thin slices and marinated overnight. I added a bit more honey to give it a spicy/sweet taste and cooked 2 ways-one batch in the oven and one in the air fryer. Hubby liked air fried and I liked oven cooked best. It was easy and delicious. I will be making this again!

This jerky is so delicious. I make it with boneless pork loin because it is so much cheaper than beef. Also, rather than 1 tbsp honey I use 3 to 4 tbsp authentic maple syrup and I use low sodium soy sauce. I appreciate that it has no MSG. I use my food dehydrator instead of the oven and it works great!

Made this many times. Only thing I add is 2 TBSP liquid smoke. Using a Breville oven on Dehydrate; 150 degrees for 4 1/2 hours. I thin slice the meat still partially frozen and then marinate overnight. Make sure you use the smoked paprika. I buy this by the pound and use it as a key ingredient in a spice blend for steak and chicken.

I added 1 tbs cayenne to the marinade recipe upping the heat level. Also, I created the jerky on my Treager using the smoke setting. It may be the best jerky I’ve had..I shared with friends and family and all loved it-I had no complaints of being to hot however I will cut cayenne back to 1/2 tbs next batch. Highly recommend.

I've tried a few of the recipes on this site and this is my favorite. I do replace the honey with a 1/8 cup of brown sugar (not packed). As far as marinade times I usually do a full 18 to 24 hrs, I've read that it doesn't make a difference if you marinade for 3 hrs or 23 hrs but that hasn't been my experience. A full day is best. Also, I know this can be tough but if you can wait another 24 to 48 hrs before eating your jerky the flavor is significantly better. I have no idea why. I usually split the recipe and eat half right away and store the other half for a minimum of 2 days. One last thing, I find the 170 temp to be a bit high but since modern ovens can't go below 170 I leave the door open about a half inch. It allows the heat flow out so oven remains on most of the time instead of the oven turning off and on continuously. This way there is a continuous flow of heat passing the meat.

My husband and I made this jerky and I could eat it like candy! We added an extra 1/2 teaspoon of red pepper flakes for a little more heat. We also marinated in a bowl instead of a ziploc bag. Sliced about 1/8" thick, against the grain. Placed in a basic, single temp dehydrator for 5 hours (will try 4.5 hrs next time). Came out crispy yet chewy. So good!

Soy sauce is very present in this but I liked it. Next batch I cut it back and added more honey which seemed to hold the marinade and pepper flakes on a bit better. A great beginner recipe! Bonus flavors if you have a smoker. 175f for 4+ hours. Yummy.

The recipe was easy to follow and prepare. I marinated the meat for 24 hours and then cooked it. I didn’t use paprika or onion powder because I was out. Family loved it and it didn’t last long.

Used 3# sliced Eye of Round....1/8" thick raw. Marinated 3 hours because of thin slice. Sprinkled coarse ground black pepper over meat after patting dry. Used both oven for half.....Air frier for half. Both was really good. Didn't last long.

Was really excited to make my own jerky, tried this recipe as it was one of the first videos that popped up. Turns out this recipe has WAY too much Worcestershire sauce. It was so strong that I ended up throwing the whole batch away and airing out the kitchen.

Although I didn't have all of the ingredients, and had to substitute steak sauce for some of the worcestesrhire sauce, and my soy sauce has a citrus flavor added, it still turned out great. In my oven, it took about 2 1/2 hours to dry. I've always used a dehydrator, but the quantity was not as much. The results using the oven were outstanding, quicker, and MUCH easier to clean. Fun to make

This is a FANTASTIC and EASY recipe! I like spicy jerky so I added a tablespoon of powdered cayenne to the marinade (as well as two teaspoons of liquid smoke). Totally worth the effort and the family raves about it! Talk about a money saver :)
