Coconut Horchata Recipe

Ingredients
- 1 cup uncooked white rice
- 1 cup almonds
- 1 cup sweetened flaked coconut
- 3 cups boiling water
- 1 (14-ounce) can coconut milk
- 1 (14-ounce) can sweetened condensed milk
- 5 cups cold water, or more as needed
- 5 cups ice
Directions
- Place the uncooked rice, almonds, and coconut flakes into a food processor. Process until the mixture reaches the consistency of sand.
- Transfer the ground mixture into a bowl and add the boiling water. Stir to combine, cover, and let it sit for 6 hours or overnight to allow the flavors to meld.
- Once rested, strain the rice mixture through a sieve twice, discarding the ground rice, almonds, and coconut flakes. The liquid remaining will be the base for your drink.
- Stir in the coconut milk and sweetened condensed milk to the strained mixture, ensuring everything is well combined.
