Ingredients

  • 2 tablespoons butter
  • cup finely chopped onion
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • teaspoon salt
  • teaspoon dry mustard
  • teaspoon ground black pepper
  • 1 (8 ounce) package elbow macaroni
  • 2 cups shredded sharp Cheddar cheese
  • 1 (8 ounce) package processed American cheese, cut into strips

Directions

Step 1: Preheat your oven to 350F (175C).

Step 2: In a medium saucepan, melt the butter over medium heat. Once melted, saut the chopped onion for about 2 minutes until softened.

Step 3: Stir in the flour and cook for another minute, stirring constantly to avoid lumps.

Step 4: Gradually add the milk, salt, dry mustard, and black pepper. Stir frequently until the mixture begins to boil and thicken.

Step 5: While the sauce is cooking, bring a pot of lightly salted water to a boil. Add the macaroni and cook until al dente, about 8 to 10 minutes. Drain and set aside.

Step 6: Once the milk mixture has thickened, add the shredded Cheddar cheese and the strips of American cheese. Stir continuously until the cheeses have fully melted and the sauce is smooth.

Step 7: In a 2-quart baking dish, combine the cooked macaroni and the cheese sauce. Stir well to ensure the pasta is evenly coated with the sauce.

Step 8: Bake the dish in the preheated oven for about 30 minutes, or until the top is golden and bubbly.
