Best Italian Sausage Soup Recipe

Ingredients

  • 1 pounds sweet Italian sausage
  • 2 cloves garlic, minced
  • 2 small onions, chopped
  • 2 (16 ounce) cans whole peeled tomatoes
  • 1 cups dry red wine
  • 5 cups beef broth
  • teaspoon dried basil
  • teaspoon dried oregano
  • 2 zucchini, sliced
  • 1 green bell pepper, chopped
  • 3 tablespoons chopped fresh parsley
  • 1 (16 ounce) package spinach fettuccine pasta
  • Salt and pepper to taste

Directions

  1. In a large pot, cook the sausage over medium heat until browned. Remove with a slotted spoon and drain on paper towels. Drain excess fat from the pan, reserving 3 tablespoons.
  2. In the reserved fat, cook the garlic and onion for 2-3 minutes, until softened and fragrant.
  3. Stir in the canned tomatoes, wine, beef broth, basil, and oregano. Bring the mixture to a simmer.
  4. Transfer the mixture to a slow cooker. Add the cooked sausage, zucchini, green bell pepper, and fresh parsley. Stir to combine.
  5. Cover the slow cooker and cook on Low for 4-6 hours, allowing the flavors to meld together.
  6. Meanwhile, bring a large pot of lightly salted water to a boil. Cook the pasta in the boiling water for about 7 minutes, or until al dente. Drain the pasta.
  7. Once the slow cooker cooking time is complete, add the drained pasta to the slow cooker. Stir everything together and let it simmer for an additional few minutes.
  8. Season with salt and pepper to taste before serving.
