Black-Eyed Peas and Sausage Stew

- 1 pound dry black-eyed peas
- 3 (10.5 ounce) cans beef broth

- Ground black pepper to taste
Directions
- Step 1: In a large saucepan, add enough water to cover the black-eyed peas. Soak them for 8 hours, or overnight. This step is important for softening the peas.
