Ingredients
- 1 (32 fluid ounce) s chicken stock
- 1 tablespoon minced fresh ginger root
- 1 teaspoon chili powder
- 1 clove garlic, minced
- 1 large cooked skinless, boneless chicken breast, chopped
- 1 head bok choy, chopped
- cup dried shiitake mushrooms
- 2 (7 ounce) packages dried udon noodles
- cup mung bean sprouts
- 1 green onion, sliced diagonally
- 2 tablespoons dried minced onion
- 1 tablespoon chopped fresh cilantro
Directions
Step 1: Gather all the ingredients needed for the soup.
Step 2: In a medium-sized pot, bring the chicken stock, minced ginger, chili powder, and garlic to a boil over medium-high heat.
Step 3: Once the broth is boiling, add the chopped chicken, bok choy, and dried shiitake mushrooms. Reduce the heat to a simmer and cook for 3 minutes.
Step 4: Add the dried udon noodles to the pot and cook for an additional 4 minutes, or until the noodles are tender and fully cooked.
Step 5: Ladle the soup mixture into individual bowls, ensuring each bowl has an even distribution of noodles, vegetables, and broth.
