Colleen's Slow Cooker Jambalaya Recipe

Ingredients
- 1 (28 ounce) can diced tomatoes with juice
- 1 pound skinless, boneless chicken breast halves, cubed
- 1 pound andouille sausage, sliced
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1 cup chopped celery
- 1 cup chicken broth
- 2 teaspoons dried oregano
- 2 teaspoons dried parsley
- 2 teaspoons Cajun seasoning
- 1 teaspoon cayenne pepper
- teaspoon dried thyme
- 1 pound frozen cooked shrimp without tails
Directions
Step 1: Gather all the ingredients and ensure you have everything ready.
Step 2: In a slow cooker, combine the diced tomatoes (with juice), chicken, sausage, chopped onion, green bell pepper, chopped celery, and chicken broth.
Step 3: Season the mixture with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme. Stir everything well to ensure the seasonings are evenly distributed.
Step 4: Cover the slow cooker and cook on Low for 7 to 8 hours, or on High for 3 to 4 hours.
Step 5: In the last 30 minutes of cooking, add the frozen cooked shrimp (without tails) into the slow cooker. Stir gently to combine and heat the shrimp through.
Step 6: Once cooking is complete, serve the dish over rice for a complete meal.
