Traditional Armenian Gomgush Recipe

Ingredients

  • 1 bunch basil, chopped
  • 1 bunch cilantro, chopped
  • 1 bunch parsley, chopped
  • 1 sprig thyme, chopped
  • 5 medium tomatoes, chopped
  • 3 green bell peppers, chopped
  • 6 medium russet potatoes, peeled and cubed
  • 3 pounds lamb chops, cubed
  • 3 teaspoons ground cumin
  • 1 sprig mint, chopped
  • Salt and ground black pepper to taste
  • 2 eggplants, chopped
  • 3 carrots, chopped
  • 2 cups beer, or more to taste
  • 4 brown onions, chopped
  • 7 cloves garlic, minced

Directions

  1. Combine the basil, cilantro, parsley, and thyme in a bowl. Reserve 2 tablespoons of the herb mixture in a separate bowl and refrigerate for later.
  2. Place half of the remaining herb mixture into a large soup pot. Add half of the chopped tomatoes, bell peppers, and potatoes in layers. Top the layers with the lamb, then season with cumin, mint, salt, and black pepper.
  3. Layer in the chopped eggplants and carrots, then add the remaining tomatoes, bell peppers, potatoes, and the second half of the herb mixture on top.
  4. Pour in the beer over the layers of ingredients.
  5. Cover the pot and cook over medium heat for about 1 hour.
  6. After 1 hour, add the chopped onions and minced garlic to the pot. Taste the dish and adjust the seasoning with salt if necessary. Continue cooking for an additional 2 hours.
  7. Once the dish is ready, garnish with the reserved 2 tablespoons of herb mixture and serve hot.
